To ask what you have in your massive salad

I’m trying to lose weight. I need to reduce sugar and carbs and increase fibre and protein. I don’t eat meat/poultry and have an egg allergy.

To make this easier on me, I have been sticking to salads for lunch, basically random stuff from the fridge. I’m just looking for some inspiration of stuff I can buy in my shopping and just add to salads. So far I have been trying.

peppers
cucumbers
beetroot
olives
edamame beans
quorn fillets
pesto and lentils

Only fat people eat massive salads.

Just have normal meals.

I'm not skinny but lower end of normal BMI. Very lucky to have had parents who taught me to eat three normal meals a day. Just do that, moderately healthy food, and you'll be fine. In England in March you need a hot meal.

Do you eat fish? Smoked mackerel, poached salmon, smoked salmon, tuna

Quinoa, Bulghar
Roast veg - peppers, courgette, aubergine, sweet potato

Careful of the ingredients on some of those things, check the calories. I bet the Quorn fillets are highly processed and high calories

Highly processed, yes. Plain uncrumbed fillets are not high in calories.

I mix up a can of Chickpeas, a raw crushed garlic clove, lots of fresh chopped parsley and corriander, some lemon juice and season. Then I will have this in addition of a bunch of standard salad things like cucumber, leaves, tomatoes, beetroot etc and crumble feta on top 👌

another good one is roasting some butternut squash and adding it to a large batch of couscous, also throwing in chopped beetroot from a jar and some feta. Then again, having standard salad stuff with it

My favourite salad at the moment is -

Tin of green lentils
Tin of sweetcorn
Tin of artichoke hearts
A red pepper
Half a cucumber
Handful of olives
Cherry tomatoes
Lemon juice
Olive oil

i make a Tupperware full and eat it 3/4 days in a row for my work lunch.

My fave salad starts with a greek salad base - tomatoes, onions, cucumber, any colour pepper, lower fat feta cheese and a mix of black and green olives. I then add in some lettuce, rocket or mixed leaves plus some fruit, usually some sliced grapes and blueberries, but grated or chopped apple is also nice. Sprinkle with oregano and black pepper and dress with a drizzle of olive oil and balsamic vinegar or lemon juice then a final sprinkle of pine nuts and nut/seed mix on the top. Absolutely delish and really nice with some hummus and pitta on the side.

I like doing a falafel salad of lettuce, cucumber, tomatoes, grated carrot, chopped red and yellow pepper, red onion with falafels and lots of hummous on top.

Yesterday I had Lettuce, cherry tomato, cucumber, red onion, sweetcorn and radishes all finely chopped, grated carrot, tuna with some salad cream, vinegar and black pepper and cheese on top.
