My favourite!

Spicy red pepper soup

Red pepper
Chilli flakes
Cherry tomatoes
Tin tomatoes
Olive oil
Rosemary
Garlic

Combine all ingredients in le creuset or other heavy lidded pot + litre of stock. Put lid on

Put in oven for an hour

Blend once done!

Add cooked orzo and feta on top, plus drizzle of olive oil. Tear up some fresh basil

Great with meatballs in it as well! Honestly I eat it every week. Love it! Lots of vit c so great for colds

Ooohh I love these kind of threads! I roast butternut squash, then put that, onion and the sofrito mix into the slow cooker. Add some barley and hand whizz it after it's done. I'll add left over chicken or any other meat as an option.

Boil onion pepper and diced chicken until soft
Later on add potatoes til soft
Even later still add sweet potato, squash, sweetcorn and dumplings

Done

Don't forget seasoning of herbs and pepper!

This one is my current favourite. I double up the ingredients so I always have some in the freezer.

Pierce the butternut squash with a sharp knife and microwave for three minutes. Makes it much easier to peel and chop.

No recipe, but if you're using any veg that roasts nicely (ie most root veg) and you have the time, then dice and roast it first. Probably works in an air fryer (I don't have one). Makes it much nicer. It's good to do when you've got the oven on for something else - just make the soup for later.

I really love celery soup. It's perfect for leftovers after using a few stalks in a soffrito.
I literally just boil in veg stock and blend, sometimes add pepper.
That's it!!

Roasted pear and parsnip, I like it as it's not one you see as ready made option but it's really lovely. With cream as well!

As far as I'm concerned it's just about using up any left over veg - could be from vegetarian curry or things that were served on the side when eating meat/chicken/fish.

I'd fry a bit of onion/garlic, chuck in some seasoning, the left over veg, maybe half a stock cube. Then water and blend when it's all softened. I might add a bit of chopped potato or red lentils to thicken things up. If we've had a whole chicken I might have some real stock to use as a base. (Though this tends to be used for risotto.)

Soup's also a good way of using any old veg that are getting slightly manky - celery or carrots or tired spinach - so would not be good served up as any other way.

This is my recipe too. 🙂

Two tins chopped tomatoes, one jar of roasted peppers (washed), 1 chilli chopped, 2 tablespoons tahini. Heat together in a large saucepan then blitz with a hand blender

I often find red lentils won't soften, especially when cooking in tomatoes. What am I doing wrong?

I like an Italian soup (but weirdly not that into other Italian food). These two are my favourites. The courgette one is great if you grow your own and have a glut.

I also love a good minestrone soup too as it is packed with veg. Also do a squash, pepper and Chorizo soup, but I tend to chuck it all in and don't have a recipe.

Lentils seize up when cooked with something acidic like tomatoes so best to cook them separately and then add to the soup. I've also heard that they don't soften well when you add salty during cooking but I make Scottish lentil and bacon soup with stock cubes and find they cook well with the salt from the stock cube.

My granny's chicken and rice soup -
Chicken thighs (the boneless skinless ones)
A large leek
Celery
Couple of big carrots
4 stock cubes (2 chicken/2 veg) it's a big pot
A mug of long grain rice
Big bunch of parsley
Wee shake of garlic granules.
Chop and stick everything but the rice in a big soup pot.
Bring to the boil and simmer for an hour
Stick in the mug of rice cook until the rice is ready usually 15 mins is plenty then roughly chop the parsley and put that in.
You can take the chicken out and shred it or I just take the potato masher to it to break the chicken down a bit.
Perfect with black pepper and half a loaf👌

I think it's from good food.com but it's so simple here it is:
Two butternut squash (if you go to Waitrose get golden butternut) or pumpkins (about a kilo)
Couple large onions chopped or a bag pre chopped.
800ml Chicken (can use veggie) stock
150ml (or more if you fancy) double cream
Hot paprika
Smoked paprika
Cumin
Coriander
Italian herbs with garlic
Salt & pepper

Fry the onions til soft. Chop up the squash/ pumpkin (leave it chunky) add to onions and cover to cook 10 minutes. Add the spices to your taste (I use a lot, way more than you think necessary), stir then add the stock. Simmer 20 minutes until squash is soft.
Take off the heat, add the cream and use hand blender til smooth. Should be nice and thick. Optional: Pan fry some pumpkin seeds and chopped chorizo to add a bit of texture.

Not a recipe but more of a soup hack - I discovered this autumn that you can pierce a pumpkin a few times with a fork and put it in the oven for 30/40 mins and then it's super soft and easy to peel and add to soup

I hated peeling and chopping pumpkins before

Or microwave it for 4 mins - same effect more quickly!

Although the packs say it's not required I always try to soak my red lentils for a bit and rinse several times before cooking.
