Is there a particular reason you want to poach it? Roasting seems more practical if you don't have a big enough pan for poaching, and IME tastier anyway. This looks simple

Salmon are basically big trout.

My mum used to have a big fish kettle she did salmon in, but I don't know where you get one.

I started my working life as a chef. I still very much enjoy well cooked food. As far as I'm concerned with salmon the secret is keep it simple. Salt, pepper, a bit of lemon/lemon juice, butter and wrap it in foil and oven bake. Serve it with salad and crusty bread and butter.
