To think it should have more supervision

If young DC Age 5 are using cheese graters and peelers in cooking class, my DD took a chunk of skin off a week ago and has a big cut down her finger and it’s still very sore for her.

I don't think a 5 year old should be using a peeler and I don't think it's about supervision as such. I would peel for a 5 year old and I would have pre peeled for a class of 5 year olds. I'd allow appropriate graters. I don't think I'm over the top.

They will have been shown how to use it and to stay safe.

This is all part of the learning process.

My Year 1 class (so 5 and 6 years old) learn peeling, chopping and grating in D&T. We clearly talk through hand positions to keep their fingers out of the way and all the safety aspect and I only have 6 children doing it at a time in groups of 2, so only 3 graters, peelers and knives to watch. Unfortunately there is usually at least one accident even with supervision. Graters are definitely the worst for it.
