To keep the pre cooked roast potatoes in a cool kitchen overnight?

I was planning on roasting the potatoes this evening to re-roast them tomorrow when the turkey is resting. I did this last year and they get really crispy when re-roasted.

only issue is last year I was able to put the pre cooked potatoes in the fridge. This year I am cooking for more people and don't have space. Would it be ok to leave them in an air tight container on the work top over night??

Absolutely not. It's not cold enough. It's not even cold enough outside. Leftovers should be stored at 4C or lower

Given that potatoes are not made from meat, cream, custard, fish, rice etc ... your caution is unreasonably excessive.

Food poisoning from cooked potatoes left at room temperature is a very real thing. Sure you might be lucky, but then again maybe you won't.
