Ganache icing out of fridge for 24 hours

Dd made a lovely chocolate cake yesterday and poured ganache icing made with fresh cream over it. I had no room in the fridge so it’s been at room temp for 24 hours. Can we eat the cake that is left tonight or is it a big no?

The EHO would tell you that it needs to be refrigerated due to the fresh cream.

We never chill ganache covered cakes.
It will be fine.

Room temp at the moment is pretty cool and the sugar will help preserve. I think it’s fine.

My cake holder is too big for the fridge so it stays outside the fridge for a few days until the cake is finished. My birthday cake that I covered in ganache was out for 4 or 5 days

The high fat content in cream means it's lower in water so won't spoil as fast as milk for example, and as others have said the sugar aids significantly. I wish I had cake right now Wink
