I love cooking and baking but haven't done Xmas cooking in a very long time as we are normally away over the holidays - we are staying home this Xmas, and hosting the in laws Xmas Eve, so I'm excited to get stuck in with the meal planning!

It's been about 10 years since I last did all the Christmas cooking and like a mix of the traditional elements, plus some different or interesting sides / starters / desserts / snacks.

I'd love to hear everyone's favourite recipes, or things to make around the holidays - any tips or tricks to try on the traditional elements would be great too!!

Sprouts - finely chop and saute in butter with bacon, leeks, chopped chestnuts and mix through toasted sliced almonds. Also there is no such thing as too many pigs in blankets.

Risalamande - the traditional Danish Christmas dessert. Risalamande is a rice pudding with vanilla, almonds and whipped cream, and it's typically served together with warm cherry sauce.

I've "done" Xmas for the last few years and now have a meal which is a combo of what I grew up with and what DH had as well as extra DC approved veg!
I do turkey, pigs in blankets, mash and roasties, cauliflower cheese, parsnips, carrots, roasted garlic sprouts, sweetcorn, pickled cabbage and baked beans (and a Quorn main thing for my veggie DC)
The cabbage is a recent addition, an experiment a couple of years ago which I liked so has stayed.
Shop bought desserts in previous years but I might make something this year.

This year I'm looking forward to some baking. I've got a good recipe for pfeffernuse which I'm definitely doing, DC2 wants to learn to make chocolate log, I fancy some sort of spiced cake and I'm mentally planning some Xmas jam. Never made jam before!

Black Forest trifle is a Christmas favourite in this house.
Jar of cherries in kirsh over a layer of choc brownie bites (don't overdo the liquid), melt bar of dark chocolate into custard set on top of brownie and cherry layer, whip cream and creme fraiche together and layer once custard has cooled and set, finish off with grated chocolate.

Delicious starter or lunch.

For each person, 1 slice chèvre or similar goats cheese, 1 slice bread from baguette or similar cut on slant. Few rocket or similar leaves.

gently fry bread in half oil, half butter until crisp. Place slice of cheese on top and bake in hot over for 5 mins or so.

In meantime, whisk together equal quantities of dry white wine, apricot jam and Dijon mustard, heat until beginning to bubble.

Pour over cheese breads, dress with leaves and serve.

1 However many pigs in blankets you think you need …. Make double the amount

2 Turkey doesn’t take that long to cook , put a lemon and a raw onion in the cavity ( it sort of steam cooks from the inside ) and invest in a meat thermometer ( 74°c is the temp you need to see ) let it rest for an hour covered in tin foil and a clean towel, whilst you cook the rest of the veg / sides

3 Just make whatever you like best ( but not baked beans 🤢) remember it’s only like a big Sunday roast

4 My menu for the day
Breakfast … croissants , Danish pastries , nice OJ and coffee /tea
Lunch …. We have starters for lunch , so Pate , prawn cocktail , smoked salmon ( thanks St Michael )
Dinner …. Roast Turkey , roast potatoes , Brussels sprouts ( see below ) carrots , mashed root veg , cauliflower cheese , stuffing , pigs , gravy , cranberry sauce

  • Brussesl sprouts recipe , cook sprouts in boiling water , strain then refresh in cold water and drain . To serve , fry pancetta ,add butter , toss in sprouts and sauté with salt and pepper and a bit more butter
