Re-embracing vegetarianism - meal ideas.

Hi folks,
I'm going 95% veggie (not vegan) again, but it's been a long time since I was properly veggie and I'm looking for some suggestions of simple but tasty meals. Ideally things that a meat version could be made alongside as DH/DS will still eat meat, would be great. Product recommendations too (although only have access to Tesco, Lidl, Coop on our island, so please don't make me drool over anything from M and S or Waitrose). I'm a fairly decent cook and have a slow cooker, air fryer, oven, hob, m/wave etc.
I like most veggies and pulses except aubergine and celery. Not overly keen on courgette but open to ideas for non-mushy options. Also eating cheese, eggs etc.

I love a panko breaded big flat mushroom, I air fry it and serve it in a bun with Sriracha mayo and salad, and often home made chips. You could do a normal burger for the others.

I've also made individual lentil shepherds pies in those foil trays, and frozen them - you could serve the others a normal shepherd's or cottage pie when you have one.

Stir fry veg, add cooked chicken to theirs

Tacos - yours can have refried beans, salad, cheese, veggie chili if you can be bothered, they can have normal chili. Bulk make a veggie chilli and freeze some in individual portions.

Mushroom risotto, add cooked chicken to theirs

If you don't mind the meat replacements, Richmond's vegetarian sausages are pretty good

Lidl/Aldi (I think both, but it might be one or the other, I'm not in often enough to remember) do really good individual frozen nut roasts/tarts/pies for a Sunday lunch if the rest of them are having a roast dinner

meals you make once and are tasty so everyone else in the house still eats it is probably easier and better for everyone all round?

Thanks - that list looks like some of what I used to eat...I'd just forgotten!
TBH I'm not overly keen on most of the meat substitutes, as part of the reason for going back to veggie food is not liking the feeling of the meat texture in my mouth (I can touch it to prepare). Hubby might eat some of that too, he likes veggies but likes meat too. 😬

That won't work- we rarely eat out or get takeaways tbh. I'm happy to cook meat for them. I just want veggie for me. Thanks for your comment though.
