Help! Need vegan ideas for hosting

Two veggies; one eats fish, one doesn't.

One allergic to dairy; the other allergy to eggs 🤣

What on earth am I making here for a dinner?

All can be easily adapted to add meat, fish, dairy etc for those who want .

Risotto without parmesan is an abomination

Thing is, neither are vegan and only one is veggie, the other eats fish. Loads of recipes out there.

How do you make a dairy free one? Dairy free butter and do you add dairy free cheese?

I would use coconut oil rather than any sort of vegan spread. Most vegan cheese is horrible.
I usually do a tagine (tomatoes and veg with olives and apricots, with couscous) or Jamie Oliver's 15 minute dhal (which I add chickpeas to).

I would do something like this salad, alongside some bean based falafel or burger type things. Obvs omit the cheese or serve it separately for non vegans.

She's not going to prepare separe dishes though - hence suggestions for vegan dishes which everyone can eat.

My friend once made dinner for herself and her sister (myriad of allergies), me (pescatarian) and her friend (on that elimination diet for IBS). She made sweet potato gnocchi in a tomato sauce, which was lovely.

As others have suggested, you could make a great coconut milk based curry... A stir fry or ramen (option to add prawns or meat on the side if you or the fish eating friend wanted).

Lentil based spag bol or lentil shepherds pie are good options too.
