To think people say all the right things in interviews?

I’ve noticed that during interviews, people seem to say exactly what they think the employer wants to hear. Everyone presents themselves as perfect for the job, but then in reality, it doesn’t always match up. AIBU to think that most people are just rehearsing the right things to get the role, rather than being honest about their true abilities or work ethic? Have you experienced this, either as an interviewer or interviewee?

NHS is full of people like this. Notably in the last 4/5 years.
It's as if they've been coached in what to say at interview and once in the job it shows they have no clue and no interest. They are experts at making it look like they are busy.

It's makes it so much harder on the rest of the team.
It's a waste of time complaining as nothing changes, they just brazen it out.

I work freelance as an IT contractor - been doing it for nearly 25 years, typically 6 month to 1 year contracts, so I've been interviewed many times (and have a very good success rate). Some of the interviews are shockingly bad. Questions I've had:

  • where do you see you self in 3 years time? Me: this is a 6 month contract, I expect I'll be working for a different client by then. Them: sorry, but we're looking for someone who will be loyal and dedicated. Me: so why is this a 6 month temp contract?
  • I see you've got skills in A, B and C - but we want D, E, and F. Are you happy for us to send you on training courses for D, E and F? Me : of course (but thinking, why don't you just recruit a contractor with the correct skillset)
  • what is the lowest daily rate you will accept? Me: the one advertised in the job spec. Them: but we only put that in to attract applications, we can't really afford to pay that. Me: goodbye
  • do you have skills in X, Y and Z? Me: no. Them: but we need X, Y and Z - that's the main part of the job! Me: It doesn't mention those skills in the job spec or my CV - why am I here? Them: blank faces

I would post loads more.
