AIBU to think I can prep drinks garnishes in advance?

Hi! Shameless AIBU for traffic...

I'm getting married in September and we're doing the bar ourselves. I want to prepare the drinks garnishes (lemon/lime/orange slices) in advance - ideally 3-4 days before and can then put in the fridge or freezer. Any suggestions recommended for how to store them!

YANBU - yes, you can prep them 3-4 days in advance
YABU - you're going to have dry/mouldy fruit. Yuck.

I freeze fruit all the time. You need to freeze it first on baking sheets, then you can transfer to a bag. Otherwise it will all stick together. If you can wait and do it the day before, you can leave the slides in water in the fridge and they'll be fine.

Would you then defrost the slices in advance of serving them? Presumably could serve frozen if they're going straight into drinks?

I would freeze the sliced citrus in layers on a tray then bag up, per pp. And use direct from the freezer, doubling up as ice cubes.

Agree with the other comments, that’s how we do it then add them to drinks frozen

You can freeze cocktail garnishes do it all the time.

Alternatively and a bit more special perhaps for your wedding could you get a dehydrator and dehydrate the fruit.

You could also use fresh herbs and spices such as pepper corns to garnish. These would require minimal prep.

You can buy a big tub of sliced lemons - I've seen them in bars. I don't know here they get them though.

It's my standard for lemon or lime! Wedge/slice, onto baking paper and sheet, freeze and then into bag. Saves on ice cubes too 😉
