To not start new job right away

Not currently working at mo (been studying for past 2 years while sole parenting DC with significant additional needs). I have been offered a job in the field I have been studying for and the hiring process will take around 12-16 weeks by the time qualification confirmed etc. All good, im exhausted and was looking forward to the break and spending some time with DC.
however, today new management were on the phone asking me to start right away at a much lower pay grade until my qualifications come through. I’ve said no, I’ll wait until I can start the job I applied for but now I’m second guessing myself and thinking maybe I should start now, purely to look good to new employers. But finding childcare for DC at short notice is going to be difficult.
AIBU to refuse to start early?

Similar offers not unusual in my experience (local authority). Taking up an unqualified role to start earning suits some but not others. Stick to your plans and don't worry.

What@Mikkismum said - or negotiate some conpromise so you can have time to sort childcare and take a break, yet still hit the ground running when you start the actual job.
