AIBU to put buttercream in a double layer victoria cake?

Just that. Is buttercream wrong, and should cream be used instead?

If so, does anyone have tips on how to keep cream from collapsing??
Any recipes for cake/filling will also be kindly received!

YANBU though I personally prefer cream. If I use cream, I put less in the middle and loads on top to avoid the squish out effect. I put it in the middle then it squooshes out to the edges but not over the side. Ham helps too but again not loads.

My preference is buttercream, it has more flavour and structure than cream.

Definitely buttercream. My heart always sinks a little when someone serves Victoria sponge with cream instead of buttercream, however nice the cake is. I'd rather have just jam than cream.

It might be traditionally only Jam, but that's rather dull.

I like fresh whipped cream in the summer and buttercream in the winter.

The only answer really though is: it's your cake, put whatever you want to in there!

You can absolutely use cream cheese frosting - it's just a plain sponge sandwich cake, effectively, and it'll be delicious either with fresh cream, buttercream, cream cheese frosting, chocolate ganache, just jam...anything! My pref with jam is fresh cream but obviously it doesn't last long.

I use this recipe https://www.bbcgoodfood.com/recipes/classic-victoria-sandwich-recipe and it always turns out well. Jam and buttercream, always, for the reasons others have said. Classically, you want raspberry jam; but any jam you like is obviously fine.

Word of warning: I was a bit short on icing sugar for the buttercream today, about 15g or so, I thought "sod it, it won't make any difference". It does. The buttercream is too soft, and not sweet enough. It just tastes fatty 😭

I whip up cream and icing sugar, and also add jam. Plain cream on a cake doesn't float my boat!

This makes a nice buttercream that isn't too sweet and good for piping too. I got piping nozzles for valentines and played about with some of them today using this recipe

I always make it with buttercream rather than cream unless it's for a summer dessert with fresh strawberries that I know will go in one sitting.

Buttercream is grim.

Make the Victoria sandwich with just jam, then you could serve it with some whipped cream if you want.

That sickly stuff would ruin it. You can’t call it a Victoria sponge with that in it.

The WI will tell you that it should be raspberry jam only. I am not a purist so I think a thin layer of whipped cream and your preferred jam is fine.

Jam and buttercream or jam and cream depending on how long it has to travel / last. I do either. Having 2 fillings benefits a very plain cake.

with cream, I’d put half in the middle and pipe the rest on top.

You need jam in there to sharpen the flavour, as buttercream is so sweet.

It might not be traditional but it tastes fab. I like blackcurrant jam or a sharp morello cherry, it adds a nice tartness.
