Can I eat this

Bought Minced beef late Friday afternoon to make lasagna on Saturday, didn’t end up making it. The minced beef is still in the fridge, would it be ok for lasagna tomorrow 😬I’m guessing no?

What does is smell and look like? That will quickly tell you whether its fine to cook or not.

If it doesn't look or smell weird it will be fine. Beef takes absolutely ages to go off.

I'd eat it personally but it's worth noting that I eat anything and have had really horrific food borne illnesses occasionally

If you buy a pack of mince in the supermarket, it will often have a use-by date that's several days after purchase, and it can usually be eaten at least two days even after that, so I'm pretty sure you'll be fine.

I would eat it but I accept I’m quite blasé about expiry dates, especially for beef. Chicken would be a different story.

If it is just in a bag then I would say possibly but not definitely and would judge by its colour and smell.
It would depend how fresh the beef was when they minced it/how cold your fridge it/ how good their hygiene standards are in the shop. Most supermarket mince will be gas flushed packaging (when it says 'packaged in a protective atmosphere') or vacuum packed which dramatically increases its shelf life compared to just put in a bag so you can't really compare.

If it seems OK I would probably cook it tonight rather than wait another day. The ragu/sauce for lasagne is fine made in advance
