Received a soup maker for Christmas. Tried it today using a highly rated recipe (good food) but it’s turned out rank. Is it because the recipe was for the usual pan way & I need to adapt? Is it because I used leeks? Is it because soup makers are rubbish? Any recipes that actually work?

Soup makers work.

I would not have done a non Soup makers recipe in mine.

But at a guess I'd say you didn't use good stock.

Well what was the recipe? If it involved any techniques not included in the soup maker e.g. roasting, frying etc then that might be why.

My advice it to use the recipe's that come with the soup maker to start with, do not try adapting until you are more familiar with the working of the item.

I love my soup maker.

My recipe classique is:

  • stock cube x 1 any
  • dried soup grains mix x "handful"
  • vegetables I find in fridge veg drawer x "some"
  • add protein at end (optional)

Always tastes great or least good enough

Potato can be tricky in soup. It can end up as wallpaper paste texture, if not done correctly.

I've used that recipe for leek and potato soup in a soup maker. I used 2 chicken stock cubes and one veg to bump up the flavour. The texture seemed fine

I will stick with not good enough stock then. I find if using stock cubes I use 2 when they call for 1. If you can use homemade stock even better.

I've used they recipe and it was tasty. Can also be the type of potato.

So many variables! I made a rank broccoli and blue cheese one this week.
I do best with specific favourites. Pea and ham. Tomato etc

Leek and potato is variable if you are casual about potato variety for example.

Mine is great (Morphy Richards Saute and Soup)

I put any leftover roast potatoes in the freezer and yesterday had roasted a bag of carrots so had some left .
That way I don't need extra oil.

I oven roasted a leek (DS had the oven on anyway) added the carrot , roasted potatoes and three squidy tomatoes . Marigold vegetable bouillon (the Low Salt one) and cook. Brilliant .
It doesn't taste starchy as the potato is already cooked .

I;ve done Red Pepper+ Tomato , add some red chilli and a tin of tomatoes
Carrot and Coriander
Lentil Vegetable
Roasted Pumpkin and Butternut Squash

Also tried a spinach soup and a curried cauliflower - nice enough but weird colour .
I don't add cheese or any protein .

I don;t wrote things down so it's a bit random Grin

Honestly its the recipe, try some different ones. I made a really nice carrot and coriander soup and also broccoli and stilton but my veg one was MEH

I adore mine! It's a salter one. If it's a butternut squash soup, I'll roast the butternut squash in the oven for half an hour before hand to add flavour

I use pre cut frozen veg, because I'm too lazy to cut up lots!

I generally just use the vegetable, a potato or 2 for bulk, then some garlic, black pepper and salt.

If the veggies are frozen, don't forget to allow for water coming out of them so not too much stock, I usually do about 2cm above the veggies but check occasionally and add a little flour if too runny, or a little more water if a bit thick. I get more excited than I should if consistency is just right!!

My biggest disaster was lentil soup I thought wasn't thickening so I shoved loads more in, it looked not too bad if a little thick when taking it out, on taking it to work the next day it was like concrete!

My daughter makes what we call 'The Orange'. It's a firm favourite.

Carrot (at least 2/3), butternut squash (frozen or fresh is fine) and one sweet potato. Stock cube and water. Whizz it up- we like ours quite thick- then on serving add loads of mature cheddar on the top.

I’ve also made a disgusting leek and potato soup this week - after 5 years of happy soupmaker soup making with never a dud. I’m blaming the potato (and the leek)

Same! Gutted. I think leeks needs sautéing first and the leek & potato combo isn't great in a soup maker.

My fave soup maker is general orange soup - mainly carrots, an onion, small potato, celery stick if h have it and the key ingredient- a small courgette , it makes soups creamy. 2 stick cubes and a spoonful of peanut butter for depth of flavour.

If your ingredients/veg are good quality and very fresh then you shouldn't need any stock for soup. Not unless it's French Onion

@Tatapie I make beautiful leek & potato soup in my soup maker and don't sauté them....? I just put the potatoes & onions in first. Then after 5 mins of them boiling I add the leeks. You have to make sure you put salt in the water before you add the potatoes & onions though.
Like I said previously, unless you're making french onion soup and as long as you have good quality fresh produce, then stock isn't required
