To say these roast pots aren't going to work.

I have managed to fully boil, instead of parboiling the potatoes. They are slightly over boiled, even if you were to eat them unroasted. They haven't quite broken apart, but some have a little white powder on them. Dh said they'll be fine roasted in hot fat tomo. I'm thinking mash these and do another batch. What do you think? Who is right?

They'll be fine. Just go careful when you rough them up.

A fresh tray with boiling fat, then slowly place them in one at a time. They will be lovely.

Freeze them now if you have the space then cook them

If you have a deep fat fryer then start them off in that!

They’ll be way better now than they would be if you’d just parboiled them! You want them a bit overboiled; that’s how they crisp up best

Just want to give an update. The roast potatoes ended up being the best I have ever made. I couldn't believe it. I seasoned them, and then did what you said and heated up duck fat then poured them in so they sizzled, drizzled with oil half way through. They were crispy and dark on the outside and fluffy inside.

I would have redone them if it wasn't for you lovely mumsnetters, so you all saved me a huge hassle. Dh is very smug.

Glad they worked out. Was just going to say that's how much I pre boil every time. And they are yummy.

All the celebrity chefs say you should boil them till just before they’re about to turn mushy. Sounds like they were a hit! 😃

So, confession time. Mine ended up looking much mushier than yours (went from undercooked to overcooked in a nanosecond). I discarded the proper mush at the bottom of the pan and roasted the survivors in olive oil. Everyone declared them to be the best. Roasties. Ever. And had I used duck fat 😂
I will never tell them.

I do mine even more boiled than that! Boil until very nearly cooked, meanwhile put a baking tray with a small amount of oil and dried rosemary in the oven, when potatoes nearly done leave in the colander for 10 mins to steam off all the excess water, shake about to rough up the edges, then straight into the hot baking tray until crispy! I also only use Maris piper potatoes as they're the best for roasties!
