to be confused about cooking times for Christmas dinner?

I've just received my food order and have sat down to make my timetable for cooking on Christmas Day, but am having problems working out the equivalent cooking times for items with different temperatures!
All items are pre-prepared so just need putting in the oven. Also as there's usually just the two of us, I'm not used to cooking for more :-)

Turkey 200 60+5 drizzle 10 resting
Carrots & parsnips 180 45-50
Vegan wellington 200 35
Stuffing parcels 180 30-35
Roasties 210 25-30
Pigs 190 25-30
Vegan stuffing 180 14-16
Vegan pigs 180 10-14

I've googled and just ended up more confused. If anyone can help me I would be very grateful!!!

How many ovens do you have and are they single or double in size?

If you only have one oven I would do everything at 190. Parsnips and carrots in for the first ten minutes then the next four things in your list for 15 mins then the last items for the final 15 minutes. The times and temps are guidelines really. I wouldn't over think it.

I always give my roast potatoes at least 90 minutes, but we like them well done, but I cook nearly everything at 180. You can rest the turkey for way longer than you are proposing.

I agree, 90 minutes for nice crispy roast potatoes! 180 for everything.

The turkey can rest for at least half an hour, perhaps an hour. Cover it tightly with foil and then put clean towels or tea towels over the top. When it is carved (takes about 10 minutes) you can put it back in the oven on the serving plate covered in the same foil (as long as it is oven proof) for 5 minutes or so to warm up again.

I don't really put anything in the oven until the turkey is out, maybe just the roast potatoes to start off.

Cover the cooked turkey with foil, then a towel. It'll keep hot for a while, and should rest for about 20 mins, not 10

I think i assumed OP would cook the turkey first to free up the oven for everything else.

It always seems to me that the difference between 180/200/210 is neither here nor there. I tend to cook everything at 200 and it works okay. And a little bit of charring adds to the flavour, or so they seem to think on Masterchef...

Do the turkey first at its correct temperature. Check it has cooked through. Remove it from the oven, cover it well in foil and towels and leave it to rest.

Vegan Wellington could either go in with turkey for the last 35 mins of turkey cooking time (if it wouldn't taint the vegan) or first in after removing turkey to use the residual higher heat (200) for 10 minutes or so, then turn down to the 190.

Then do as Apollo suggested in her first post for cooking all the other items.

Keep an eye from time to time on veg etc at 190 so that they aren't either cooking too fast (burning, edges curling, drying out) or too slowly (not showing signs of heat effects such as the surface, colour or texture changing)

I’ve done a Christmas dinner today , cooked the turkey and then did the roast pots , carrots and parsnips whilst it rested . In the halogen oven I did the pigs . Simple . We’ve just had turkey sandwiches .

I think your roast potato timings are off..! 25-30 minutes seems very short, you need to cook them for longer to get them nice & crispy.

Other than that, I wouldn't worry too much. We never have set timings for roast dinners and always works out fine.

Do a 'crib list' working backwards from the time you want to eat + five minutes for going to the loo and freshening up.
Have 3 columns - boil, In Oven and Out Oven. The Boil column is for stuff that needs parboiling before roasting. Use double spacing so there is room for a little note such as 'turn oven up to 200' or whatever.
The crib list is king. Follow the crib list. Knowing what you have to do AT a certain time is easier than knowing HOW LONG you need to do it for.

You take the turkey out a good hour before you need it, so then everything else goes in, you also need to turn the oven up higher than usual because it loses heat with everything going in and out

I'd give the roasties at least an hour. Longer if the oven is not on high.
