To ask for your healthy ish speedy comfort dinners

Please suggest some comforting dinners for me that are not too high in fat and carbs. Im sick of summer salads now! I eat everything so no restrictions.

Eggs Florentine and either make the cheese sauce with low fat marg, reduced fat Cheddar, skimmed milk and cornflour or omit the sauce and grate low fat Cheddar on top.

Salmon fillet, oven baked in foil parcel, serve with summer vegetables such as green beans.

Vegetable and chicken stir fry, make it colourful with peppers, chopped spinach or pak choy leaves, grated carrot etc. Use your favourite sauce eg hoi-sin.

Or if you have some preparation time available, Navarin of lamb, with green vegetables, or Spanish style chicken casserole with peppers, olives and tomatoes.

Lemon sole, topped with a small quantity of breadcrumbs, some parsley and a sprinkle of Parmesan, grill til the crumbs brown. Served with still-crunchy mixed green veg and lemon.

Israeli salad (it’s not leafy) served with Cajun blackened salmon. Could do a bit of couscous if you felt it wasn’t filling enough.

also a big fan of a lo-carb ploughman’s (ie. don’t go mad on the bread) with a boiled egg, lean cooked meat, pickles, it’s more an assembly job than a recipe but it’s quite satisfying and quick.

also homemade coleslaw, shred carrot, red onion, bit of cabbage. Mix with Greek yogurt and mustard, add some mayo if you fancy but mainly yoghurt, season. Very filling, lots of crunch, even better after a day in the fridge

cauliflower cheese! Use a really potent tangy cheddar and you won’t need as much.

If you eat potato then a Spanish omelette - will do a a couple of meals and you can have chorizo / parma ham etc with it.

Chicken with tomato and mozzarella

Salmon steaks , with mashed avocado

Huge fish finger / breaded fish ( sandwich with sourdough beard ( I may be joking here for your requirements but sometimes with tartare sauce - that just hits the spot.

short grain brown rice (you can buy from amazon, the long grain stuff is awful) cooked with some bullion powder. add grated ginger, little apple cider vinegar, sesame oil sugar and tamari onto warm rice. mix well. top with whatever raw/ cooked veggies and protein you have. I like boiled egg, peanuts, steamed tenderstem, chillies and radish. separately make a sauce with tahini, sesame oil, turmeric and maple syrup. that's it.

I also like topping plain brown rice with cube of silken tofu, veg, nuts, a fried egg and chilli garlic crisp (lo gan mao).

Japanese steamed eggs (chawanmushi). mix egg with dashi (can buy powder on amazon), strain into heatproof dish. add veggies and protein of choice (precooked depending on protein). cover with cling film and poke holes. steam until jiggly buy cooked.

basic daal and rice or pitta bread/naan. just boil red lentils in cold water with turmeric, green chillies and salt. Cook on max heat until almost boiling over... then turn heat right down abs cook uncovered until smooth and creamy. if more water needed, add hot water only. also don't use a non stick pot to cook daal. Once done. fry finely chopped onions, garlic and chilli in oil or ghee until translucent then add cumin seeds. cook until light brown and then chuck into daal. you can add veggies if you want by adding them few minutes before you add the oil/garlic/onion mix. I often add grated carrot and finely chopped spring greens. burbank serve this with boiled or fried egg, pickles and salad.

Daal is so comforting and filling. You can lighten it up with chopped fresh tomato, onion and coriander to make it a bit less winter-y

If you eat meat, roast chicken and veg is very hearty and comforting: you don't need to have roast potatoes if you're trying to avoid them. Green veg like green beans, broccoli and peas go nicely. Or roasted carrots and parsnips depending on how strict your diet is.

Very unoriginal of me, OP, and I do cook lots of proper meal but if I was in a hurry a baked potato with cheese and home-made (already...) coleslaw takes a lot of beating. Tomato salad and leaves on the side. Heaven!

@Jamielikescheese do you grill/roast the aubergine before you put it on top? - I’m not confident cooking with aubergines as always thought you had to grill them first?
