Help- how to cook chicken thighs???

Hi.. I’m not too well ATM and absolutely CRAVING Nando’s chicken - I usually get the chicken thighs and I love how it’s tender inside but has that chargrilled crispy effect on the outside. I want to make it at home but have no idea how :(

I’ve seen so many different ways to do it and watched different videos and tried in the past but it never turns out the tender and crispy way you get in restaurants and nandos. I know it will never be as good as the original but I’m absolutely craving to get something as close to it as possible

does anyone have any advice on how to cook the chicken thighs so they turn out as close to that as possible???

I’ve got chicken thighs, Nando’s marinade sauce, Nando’s rub seasoning, frying pans, an oven, and one of those frying pans that’s like a grill pan and has the grill lines on it but it goes over the hob like a regular frying pan

i don’t have an air fryer unfortunately and can’t get it

if anyone can make any recommendations or tips I would be so so grateful!!!!

Do your chicken thighs have the skin on top?

I'm a bit of Nando's thigh fan too - guilty pleasure!

It is very difficult to get skin on boneless thighs in the UK. So you need to buy thighs with the bone in and learn how to debone them and trim the skin (it is easy lots of vids on YouTube to show you how).

Best results I've got are on my gas BBQ (sacrilege I know), but you can pan fry as well. Trick is to cook with the skin side down for most of the time and only cook on the other side to cook through. My gas BBQ gets that nice slightly charred effect more consistently than pan frying.

Also, I believe that Nando's restaurants precook their chicken and then finish it off on the grill so you could try double cooking it.

Pay a nice butcher to bone the thighs 😜 worth it every time

mix a table spoon of flour with paprika powder & herbs (oregano is great) and coat the drumsticks with that. sprinkle with salt.
a little oil in an oven proof dish and bake on hot for about half an hour.

I use skin on bone in thighs (much juicer) and after marinading I cook in an oven dish with foil over the top (sealed tightly so it steams inside) for about 30-40 mins then take off the foil, baste with juices in the tray and put in again for 10 mins or so till it goes crispy.

This. My son made a marinade with buttermilk and Herby spices and soy sauce (substitute Nandos spice) and left for 24 hours

Cook them then take out any juices at the end and crisp back in the oven
