Help me eat healthy?

I’m autistic so my diet has always been pretty beige. I also don’t eat enough.
typical diet is:

breakfast - either nothing or Shreddies
lunch - small peanut butter sandwich
dinner - veggie curry

I’m chronically anaemic and my weight is now at a low point. I want to eat healthy, I just need some pointers! If you eat healthy, what does your daily diet look like?

You need to add in some more fruit veg and salad, also more protein, if you don't eat meat look to add lentils and beans to dishes, high fat protein yoghurt like greek yoghurt on your cereal with a handful of nuts or fruit. The nhs website has lots of info on achieving a healthy balanced diet.
maybe if you don't like eating try making smoothies with fruit and veg and add yoghurt.

My diet today which i think is healthy i am however trying to lose weight so you would need to eat more.
breakfast strawberries and raspberries with yoghurt
lunch 2 small slices low carb seeded bread with marmite and scrambled eggs
dinner home made veggie scotch egg with large mixed salad with salad cream dressing.
snack tonight a few strawberries, raspberries, blueberries and grapes arranged nicely on a saucer 😁

You need to either make your meals more calorie dense or you need to add in snacks and or sides.

If you want higher calorie without too much volume look at adding ground nuts (almonds work brilliantly in a curry) and up the quantity of coconut cream/milk. If you can manage you could serve with onion bhajis, naan bread, or popadoms, even a dollop of mango chutney would add some calories.

Could you add anything your lunch, maybe a pudding of some kind? Banana custard? Greek yoghurt with a sprinkle of nuts and some fruit?

Do you have any calorific drinks? Milk shakes, hot chocolates, smoothies, latte, juices?

Do you have certain foods you won’t eat at all?

When I’ve had to gain weight in the past I’ve found the best way was to eat three meals plus three snacks a day and to add in a lot of calorie dense foods - peanut butter, nuts, seeds, oils, avocado, etc.

I eat a bit less now that I’m at a healthy weight and maintaining rather than gaining but still the same types of foods. A normal day would be something like a breakfast of porridge with fruit and nuts and seeds or peanut butter or toast with scrambled eggs with some veg added like cherry tomatoes and spinach. Lunch is usually leftovers from dinner the previous night. Snacks are things like banana with peanut butter, apple with cheese, yoghurt with fruit, veg sticks with hummus. Dinners are various different things. This week my meal plan has had sea bass with rice and veg, sweet potato and black bean stew, tofu and vegetable stir fry with noodles, jerk chicken with vegetable rice, chickpea and new potato curry with quinoa, lentil and vegetable tray bake, and vegetable and goats cheese frittata.

If you enjoy cooking then trying out new recipes that you like the look of can really help as well.
