To ask what you think of a Easter dinner traybake?

So this Easter we will be cooking Easter dinner ourselves rather than going to parents house. I want to do (vegetarian) salmon, asparagus and potatos on Good Friday as I know salmon is traditional

But for Easter Sunday I'm toying with the idea of a veggie Easter dinner traybake. I love a roast but it can be a real pain to cook everything, takes up lots of space in the oven, difficult to get everything ready and hot at the same time, and we always end up with too much on our plates!

So I'm thinking to keep it easy and reduce washing up, what about a traybake type meal but with all the roast ingredients thrown in in - so a big oven tray with roasted veggies like broccoli, carrots, onions, cauliflower cheese etc and then roast potatoes, stuffing, some sort of veggie main like veggie sausages/nut roast cut into pieces, and then Yorkshire puddings added on in last ten mins (they'll just be frozen ones).

Thoughts? Is it just too lazy and non-eastery? Any ideas of how to make it special, or any other ideas for a fuss free Easter dinner?

You would have to be sure of the timings for adding the veg ie broccoli will roast really fast but yeah, why not!

(we had Christmas on a Stick once: turkey chunks, stuffing balls and chipolatas on skewers, cooked on the BBQ with additional veg cooked in the trad way, it was fun)

Surely you’d do the cauliflower cheese separately? Otherwise it will all just be cheese veg? Then you’re already making 2 dishes? It still sounds like lots of room in the oven to me.

I like a tray bake but the problem I have is that you need a lot of trays! Even with 4 of us we tend to need two trayfuls, especially if it’s veggie, so it can all cook evenly.

Depending on the veg, you could traybake a load the day before and then just hot them up on the day - roasted veggies are generally pretty good for reheating.

Does it matter? Obviously Easter is a big deal to you but I thought the Christian focus was on a shared meal rather than a specific dish.

I mean... isn't that basically just a roast dinner or am I missing something? Is there some other way of doing a roast that doesn't involve roasting vegetables on a tray? It does sound like you'd still be faffing around quite a lot as all those vegetables roast at different speeds so it's not as if you could just wang them all on one tray and be done with it.

I have done a veggie traybake before with veggie sausages, roast potatoes, broccoli, onions, peppers and carrots and they all went in at the same time except i think the potatoes went in 20 mins before it, but it was easy to just add everything on top of them. It worked well and I really enjoyed it, added some tomato based marinade sauce and loved it. I'm just wondering whether its fancy enough for Easter really.

If not just cook what you want.

Well even if you were you could!

We tend to have fish on GF-doesn't have to be specifically salmon I don't think.

We've had battered fish/fish fingers chips & peas quite often before.

When I do a roast I often put as many veg in the oven as possible.

ooh thats a good idea, it will feel more special if the table is decorated!

I've always like the idea of those desert easter eggs with cheecake in them, and some baileys over the top 😍

If you’re looking for tradition, anything vegetarian at all is traditional for good Friday. The tradition is a ‘fast day’ which in Christian terms just means avoiding meat/poultry. So people eat fish because meat is banned, not because you have to eat fish, iyswim.

Go for it then, who doesn't love roasted veggies? Sounds great to me, I'd scoff that down for Easter dinner quite happily.

Fancy enough for who? Unless it's the King and Queen you're trying to impress then whoever you're entertaining will have to make do with whatever you cook. If it's family and/or friends then I'm sure they'd rather have more time with you then have you stuck in the kitchen preparing Foie gras and felafel gubbins. This is the exact reason why curry is the best dish for Christmas day.
