To ask for easy, relatively healthy family meals which can be veggie?

I’m in a food rut and want some new ideas.

Ideally:
-suitable for BLW a newly one year old (he’s a good eater)
-suitable for a fairly fussy 7yo - she prefers her veggies raw unless they are blended into sauces
-able to make vegetarian alternatives
We seem to be eating a lot of pasta.
We are about to become more time poor so would like things that can be cooked in advance and reheated (ideally from frozen)

Im not looking for anything fancy before people start sending me things like that. I’m looking for alternatives to freezer tapas.

Mixed beans chilli with rice, potato, wraps etc. cheat and buy the mixed beans in a tomato sauce and add some added veggies. I always make two portions and have one 2 days later so it’s like a micro meal time wise, on the day I have longer I serve with rice or potato and then wraps when it needs to be quick.

lentil curry or chickpea with naan / rice etc. curry can be frozen.

Veggie stir fries take 10 mins with some noodles and a sauce.

egg fried rice etc

Generally my go to easy, quick fuss free meals for mid week but looking forward to other suggestions as I think I’m stuck in a rut with mine!

Wraps are always good with my kids. I put several toppings on te table and they can fill their own wrap.

Bean wraps, lentil spag bol, mushroom stir fry, bean burgers and sweet potato curry are our go to veggie options. Our DC has shared these meals with us since he was approx. 8 months.

Sweet potato, pinto bean, spinach and cheese enchiladas. Store-bought tortillas, enchilada sauce and shredded cheese. You only have to steam the sweet potato and saute with onion the other veggies and spices. They freeze great, I make three trays at a time. They take about an hour to put together. They cook from frozen.

Veggie and vegan sausage tray bake, cut up veggies (bell pepper, green beans, broccoli) toss with olive oil and store in container till ready to cook, throw on large sheet pan with tator tots and cut up vegan sausage and roast till done.

Crockpot throw and go soups

Rainbow roll ups, spinach wraps, veggie cream cheese, bell pepper, carrots cucumber, spinach and cheddar. Can be made a couple days ahead.

Store bought pupusas topped with smashed avocado and egg

Naan pizzas with jarred tomato sauce and store bought shredded cheese. You could also make tomato sauce in advance and blend in veggies

Bean, cheese and spinach quesadillas with avocado and plain Greek yogurt. These work great with little corn tortillas and sharp cheddar. Can be prepped in advance.

Veggie potstickers, I like the half baked harvest recipes, these can be made in advance frozen on a sheet pan then stored in a bag till ready to cook from frozen. I would serve with pantry minute rice mixed with riced cauliflower, though you could also make rice in rice cooker or instant pot depending on how much time you have.

Thanks so much! Some new ideas and also some things that we used to make that we kind of forgot about. I’m going back to work full-time and I have no idea how to feed us all (time wise) without us ending up with rickets, and I’ll be alone at dinner time most days so my plan is that partner takes kids out for a few hours at weekend so I can get prepared (or vice versa)

Fajitas, chicken/beef/fish, plus stir fry veggies, with refried beans, guacamole, sour cream and chives.
Veggie lasagna.

If it's speed you are after - a bag of frozen Italian Style Veg from Lidl is great made into a veggie lasagne with sauce jars or your own sauces. It's that flexible - if you have time - make your own sauces, if not - cheat!!
Tastes great with some garlic bread

Veggie sausage, mash and baked beans/veg.
Omelette, with fillings tailored to choice. Things like bacon, mushrooms, mixed peppers, sweetcorn etc, or just plain.
Jacket potato in the microwave, with beans & cheese, veggie chilli, tuna mayo.
Boiled eggs and toast.

Bean chilli, fajita kits (just sub the meat for beans) omelettes, curry, baked potatoes and beans, veggie sausages and mash.

At the moment I've got a gardeners pie in the oven- just a shepherds pie but I chucked in a tin of green lentils instead of mince, sometimes I use Quorn mince in instead.

We're lucky to have a lot of really good fake meats these days that can be chucked in in place of meats in your usual meals and it's a really easy swap :)

Look at making things that you can repurpose into different meals. E.g. a massive lentil bolognese, have half with pasta or rice and turn the rest in to bolgnese. Or five bean chili with rice or wraps which you then turn into a pie topped with cauliflower and potato mash.

I do love a chickpea and lentil stew. Freezes nicely and very filling.

The eating with the kids website has a vegetarian slow cooker pack which about 50% of my meals come from.
