To think this food will be perfectly safe to eat?

Doing some pre cooking for lunches for me and DH to take to work this week.

Monday's lunch is leftovers from today's dinner. On Tuesday we are having pasta bolognese. I already had beef mince that was cooked and in the freezer from another day, so I took it out this morning and it has now defrosted (it's back in the fridge)

When the pasta had completely cooled, I split it into two containers and added the mince and all the other ingredients, and popped them into the fridge for us to grab before work on Tuesday.

DH is claiming that the mince will be unsafe to eat because it was cooked a different day to the rest of the ingredients Confused . He also said its "risky" eating meat 2 days after it has defrosted and it should be eaten either tonight or tomorrow at the latest.

I told him the mince was defrosted and I waited until the pasta was completely cooled before mixing the two, and it will be perfectly fine to eat 2 days later as its been kept in the fridge. He doesn't believe me and says I will give us both food poisoning Confused

Is he lacking in brain cells or have I been using unsafe cooking practices for the last 15 years?

I wouldn't eat this. Cooked food that has been frozen and then defrosted should be eaten quickly. Within 24 hours would be OK, but no more than that in my opinion. I am fairly relaxed about this sort of thing, but I would not risk this.

Mixing is fine, YANBU for that

However, he’s right about the two day thing. I’d be eating it same day if it contains defrosted meat.

I would happily eat that, but if he's not happy could you have the leftovers on Tuesday and the pasta tomorrow instead?

I’m in the ‘defrost and eat that day’ camp.

Did you freeze it the day you cooked it or was in in the fridge cooked for a couple of days before freezing?

I wouldn't eat it either and I’m usually quite relaxed about food. Why didn’t you wait to take it out of the freezer tomorrow if it wasn’t going to be eaten until Tuesday? Now it’s defrosted, I’d eat it tomorrow and the leftovers Tuesday instead.

The mince was frozen the same day it was cooked.

Seems to be a bit of a mixed bag so far.

Dh doesn't have to eat it if he doesn't want to, which is fair enough he can make up his own mind.

I'm looking forward to my bolognese on Tuesday though Grin. Maybe I'm too relaxed about things like this!

@Lcb123 and anyone else: heating does not make food safe. It sometimes does, but it’s not just bacteria that make you sick. Bacteria that cause food poisoning also release toxins into the food. Heating thoroughly kills the bacteria, but does not remove the toxins.

so if the food goes off (bacteria and toxins), heating it won’t stop making you sick…

it’s a common misconception, though

It is perfectly fine Op, but if he is that worried, have the spag bol tomorrow and todays leftovers tuesday.

He's an idiot about the mixing of ingredients and quite frankly needs to learn something about food.

But.. you had ore-cooked.mince that you've defrosted, you should eat it within 24 hours. If you're saving meat for another meal, freeze it raw not cooked as it would buy you the 2 days assuming it was frozen not long after buying it.

If its been cooked and frozen the same day I'd eat it up to 2 days after defrosting. After that I'd chuck it out.
It's going to stop growing bacteria once frozen so essentially same as having meat in the fridge for 3 days.
Never had any issues using this method with meat of any sort.

I defrosted some Turkey breast two days ago, I’m eating it sliced in my salad for lunch yesterday, today and tomorrow. I expect to still be here Tuesday 😂

ive Never had food poisoning and regularly eat food well last use by date, reheating frozen food, street food in Thailand… sorry but there’s too much hysteria around food safety

Once defrosted it should be eaten within 24 hours. I would have defrosted the bolognese for the day you are using it not 2 days before.
