To ask for healthy meal ideas? Feel shit, need to eat properly

As per previous thread, I feel shite, I have no energy at all. My hair is falling out …

my diet is also crap. I’m doing a grocery online order right now - hence why I’m posting here for traffic.

Any healthy recipes/meal ideas you can recommend would be highly appreciated. Preferably packed with vitamins!

Pouring olive oil over your food is very healthy. Maybe have a listen/read anything you can by Professor Tim Spector. He recently did a podcast on diary of a CEO where he talks about food, calories, etc.
according to him and many others a diet high in olive oil is one of the simplest and healthiest things you can do.

I love chicken drumsticks or pan-fried fish with rice or mashed swede and steamed broccoli/green beans, with a green salad.

That's exactly why I always keep reminding people trying to lose weight that healthy doesn't mean weightloss.
Your latter issue might balance it though😂😂

Chia seed pudding for breakfast. Has fibre and omega 3. Three ingredient recipe - chia seeds (got mine from Home bargains so cheaper), vanilla and a form of milk. I've used cow's milk and coconut milk so far. Stir together, stick in fridge for 8 hours. I have frozen fruit that I can stick in a bowl to defrost overnight, then next morning, eat defrosted fruit with a few spoons of the pudding. Most recipes for the chia pudding serve 4 so I just leave it in the fridge and dig into it over 4 days. Easy win for me.

I am very healthy and look young for my age. I really swear by olive oil on everything. I have three different types - one to cook with, one for salad dressings and one for drizzling.

You want to base you main meal on at least 3-5 veg.

If you make spag bol, add onion, finely minced celery and carrot, then mixed peppers and maybe mushrooms as well as chopped tomatoes and mince. It takes longer to prep but really bulks out the dish so you often have enough for 6 or portions from a 400-500g pack of mince.

Cut strips of chicken breast or thigh and stir fry them with peppers, beansprouts, spring onions, finely sliced carrots, celery if you like it, and pak choi or chinese leaf. You can add baby corns and mange tout or sugar snaps but these are very expensive for the amount of veg you get so stick to the cheaper bulkier veg if you want to keep cost down.

Risotto with butternut squash, red onions and red peppers, smoky paprika and chickpeas is lovely. You can add chorizo if you want.

Fritatta - fry onions, finely chopped potato, peppers, peas, garlic and herbs you like. When cooked, pour beaten eggs over them into the frying pan and cook until base is firm then finish with some grated cheese on top, under the grill.

Soup is so easy. I just fry onions or leeks, then add carrots and any other left over root veg - potatoes, parsnips, squash etc with some stock. Throw in half a cup of red lentils or a tin of butter beans. Use garlic and either herbs or spices to flavour it (chilli and ginger with cumin or rosemary, sage and thyme) When the veg is very soft blend it with a hand blender. If it's too thick, add more stock.
