More of a WWYD really?
Purchased a product from a shop yesterday which unknown to me was out of date and mouldy.
Would you expect a replacement only or would you expect more?
Yanbu = more

Apology and replacement unless there's something further like you'd not looked and had eaten it and got ull.

Actually I think a bit more than a replacement because of the inconvenience of having to go back, and the potential you could have eaten it and been unwell. I once got a prawn sandwich from Boots at lunchtime took it to work, opened it, it stank so.i checked the date and it was 2 days past use by. Luckily I had receipt so.took it straight back. They apologised, gave me another and a box of celebrations by way of an apology, which was good because I wasted my whole lunchbreak sorting it out. Sharing the chocolates with my colleagues cheered me up though 😀

Depends really. Will you have to drive back to pick up the replacement? Is it far? If so, I don't think you should be out of pocket due to their error so I'd probably expect a replacement but also a refund.

I'd expect a replacement or a refund if I didn't want the product any more (bought for lunch and then had something else for example) but not anything further unless it was a massive hassle to sort out.
If it meant taking a special trip back to somewhere unless it was very expensive I don't think I'd bother but might ring or email to let them know what had happened, but mistakes do happen, people working on the shop floor are humans and when humans are involved there's always a potential for a genuine mistake, and as a human I accept that. So it would just be a fyi type thing, not a complaint or kick off.

Just a refund or replacement. I’m not even fussed about an apology, mistakes happen, some poor minimum wage overworked sod clearly missed the package when doing stock check and rotation and the last thing I’m interested in is then getting even more of a bollocking because a customer demanded to see the manager and get compensation.

I wouldn't really class shops response as a proper apology even.

In the kindest possible way, you feeling rubbish and that being the reason you wanted it isn't really relevant, what's relevant is that you bought something that wasn't what you paid for and then needed to return it and get it changed, not the reasons for doing so.
A refund for the item or replacement is suitable and yes, possibly both as it's been a bit of a hassle for you to replace it.
And what apologies did they give and why wasn't it a 'proper' one?

Bit dramatic. The shop assistant apologised but of course it won’t have been heartfelt she’s just apologising on behalf of the company, she didn’t personally sell you mouldy food hoping to ruin your day.

It's probably going to depend on the shop. Somewhere like Waitrose might do both but other places would just refund.

Replacement, apology and actually them to thank you for bringing it to their attention so they can check their systems for ensuring it doesn't happen again

She just said something like ok just have this one. Given they are supposed to check stock daily having something on the shelf 2 weeks out of date is bad I reckon.

I think a replacement is fine - something was missed and customers move things around.
I think your crappy day is clouding your judgement a bit.
