Ready, Steady....Cook! What would you make with these ingredients?

As per my username, suffering from a nasty UTI.

Would love to not order another takeaway but struggling for inspiration. I have a reasonably decent 'larder'.... if I list out the contents of my freezer and fridge, what would you propose I cook for dinner for DH and I (trying to avoid the obvious and boring like spag bol)

Freezer
Chicken breasts
Steak mince
Lamb chops
Salmon
Flat breads
Naan bread
Frozen sweetcorn
Peas

Fridge
Carrots
Potatoes
Corn on the cob
Tomatoes
Onion
Yellow and orange peppers
Garlic
Ginger
Mascarpone
Cheddar
Milk
Lemon and limes
Oranges

Larder
Loads of herbs and spices
All flavour stock cubes
Corn, plain, self raising flour
Coconut milk
Tinned tomatoes
Lentils
Black eyed peas
Baked beans
Panko breadcrumbs

I'm sure lots of other bits in the larder

I don't want to spend LOADS of time cooking but can do some prep this afternoon.

Suggestions to get me out of the usual suspects (or ordering a takeaway) are welcome!

If you had a bag of pasta lying around, I'd make a cheese sauce up, roast some peppers up, add the peas and sweetcorn and have cheesy veg pasta 😆

I think I’d do a chicken curry with the coconut milk, ginger, garlic and spices and naan bread. Or a marinated salmon in similar spices

Oh yes, good point! I have pasta, rice and noodles too!

Cheesey pasta sounds like a proper comfort dish at the moment!!

You could do a keema with the steak mince and have it with the naan
A chicken curry with the black eyed beans and coconut milk
I think lamb chops are so nice that you don't need to do anything in particular with those - maybe serve with roasted peppers if you want to use those up.

If there's also eggs and rice in your larder, I'd make Wagamama chicken katsu curry.

Have you got pasta?
I'd do chicken, peas, sweetcorn, peppers (and anything else you can chuck in) in a cheesy sauce with pasta.

MILD chicken curry (don't need more bladder irritation) with the spices, garlic, ginger and coconut. Turmeric is an anti-inflammatory which might help with the UTI. Lots of veggies to keep you regular... also helps when you have a UTI.

My vote’s for chicken panko fillets wrapped in flat wraps, with a tomato, onion and pepper salad.

There's loads of good options there

Salmon with a corn and black bean salsa with some chilli , lime etc and flatbread

Thai chicken and rice

Stir fry chicken or salmon with ginger, garlic etc Veg and noodles

Meatballs and spaghetti

Thai beef mince in lettuce cups

Chicken goujons with the Panko breadcrumbs with chips and veg

Veg or meat Lasagne using the mascarpone as the cheese sauce

Veg dhal and flatbread

Griddle lamb chops in marinated in whatever herbs you have with the veg roasted and rice / couscous if you have any

Chicken breast stuffed with cheese and tray baked with the veg and cubed potatoes and herbs

Do you have cooking parchment? If yes....

Prepare two large squares of paper
Finely slice your citrus fruits of choice
Sit salmon on top
Knob of butter
Seasoning
Dill, tarragon or parsley (fresh is better or just omit)

Wrap paper into parcels (like a sweet wrapper), leave some space for steam.
Sit parcels on a tray or in a frying pan.
Hot oven 15/20 mins.

Serve with peas, potato wedges or mash.

Baked salmon with pepper and onions on top. Mash potato and some veg on the side. Simple and easy.

I'd fry up the salmon or chicken with some spices, lemon juice, maybe the can on tomatoes if I wanted something saucy and have it in a flatbread with some salad and make potato wedges on the side. Yummy!

If your doing the cooking and not feeling well i'd personally just keep it simple and season the chicken or lamb chops serve with rice and veg. If you fry black pepper and minced garlic in a pan with a lil oil and stir it into the cooked rice it tastes soo good!

Ohhhh I used to do the Gizzi Erskine version of this and it's fallen off my radar and I know it's yummy. Will check and see if I have eggs

And thanks so much for the helpful suggestions to avoid spices and rest etc

DH is working (I'm on mat leave) but when he logs off he'll take over childcare duties for baby and toddler-my pain is worse in the evening and standing and moving about actually helps so being in the kitchen cooking is preferable to putting kids to bed!

Sorry to update but DS who is nearly 3 started vomiting this evening and probably has a grotty nursery bug.

So I'll be cooking something tomorrow

We are now deciding what type of takeaway to have, then deciding what dishes to get...and I probably could have knocked up one of these lovely dishes by the time we decide!

But DH and I have changed bedsheets and pyjamas twice already and just can't be arsed!

I will defo be making something tomorrow though so thanks!

I do salmon like that but I do it with cous-cous and roasted peppers, onions, garlic etc., lovely. From not feeling hungry and planning to eat a banana I am now ravenous, thanks!
