Aibu to refuse to change my working days for meetings

I work part time on fixed days. The other days I look after my children who are preschoolers. We have a new boss who is making repeated demands that staff must attend extra meetings and training on their non working days. These dates are totally random and were not pre published in advance.

WIBU to say no?

Depends what was agreed and is in your contract. I was allowed to go part time on the understanding that I'd continue to attend a meeting every 3rd Friday, but I only accepted thus because my kids are school age so I can do it for time off in lieu.

I don't work on Tuesdays. One of my team doesn't work on Fridays. Nobody would ever expect either of us to come in on our day off. Large organisation of 5k staff.

I wouldn't ever ask anyone who works for me to come in on their day off.
