Feeling completely fed up and out of inspiration. DC fed so it's just me to cook for.
It's hot and muggy here so I don't want to put the oven on. I have been food shopping but £40 doesn't get as much fresh stuff as it used to does it? Well stocked cupboards though thankfully.

Mexican style Cod - poached cod in fish stock which is then flaked and added to mix of onion, garlic, diced courgette, red pepper, tomato and a bit of sweet corn. Plus Tabasco sauce or I used mild chilli powder as I don't like it too hot. Crushed Doritos on top and grated cheese and under the grill for 2 minutes. Was delicious!!

I am making pad thai this evening - a lazy version with a kit.
I'm making mine with prawns, but it works well with chicken or tofu too.

I made a huge deep softly set quiche with spinach and soft fried leeks and lots of nature chedder. Serves 10 so it's economical per portion. It's perfect for these hot evenings with a salad.

One of my favourite Sandwiches - Splashed out on a supermarket sandwich (Turkey Club which isn't available in all Sainsbo's so when I visit the store that does I just have to buy!) which I'm having with some oven chips.

I get a weekly food box (Gousto) for this reason. Works out cheaper and always a meal available when I’m out of ideas. I forgot to choose the menu last week so we didn’t get it this week and I hate having to plan dinner again!

Poached salmon cooked in slow cooker with white wine, bay leaves, rosemary and oregano along with roasted veg and homemade bread.

We had cold smoked tofu chunked in with lettuce, tomatoes and beet root with a squeeze of lemon and some olive oil. 😇
