To have only just discovered that you can buy egg whites/yolks in a bottle/carton?

I was looking at a recipe that asked for 80g egg whites and was thinking WTAF, why not just give a number of egg whites? You learn something new every day.

You can usually approximate. Separate 1 egg and weigh it and then decide how many more you need. You can freeze the leftover yolk/white for next time you only need one.

If 80g isn't a whole number of egg whites (or somewhere close to 80g) it's still going to be a whole lot cheaper than buying packaged egg whites (never mind the environmental impact of all that extra packaging and transport, and the processing which will have been done to the whites to make them last longer). Just separate some eggs until you get to 80g.

(But yes - giving egg white quantity by weight is silly. But you don't need to resort to buying it to get the amount you need).

Happen to have a carton! 200gr is six egg whites so 80g is 2.42 egg whites. Not very helpful!
