I’ve ALWAYS struggled with making pancakes- either they are too thin and are crepes or they are too thick and stodgy and more like cakes or scones. But I’ve found the perfect recipe and made them 3 times today already and they are actually like the proper pancakes you can buy in shops/cafes! Just wanted to share it incase anyone else was struggling :) there’s so many different recipes online but this one is amazing and actually works!!! Thought I would share it for anyone else struggling like I was

65g of caster sugar
240g of self raising flower
a pinch of salt
2 eggs
480ml of milk
Seasoning of your choice (eg cinnamon)

mix the dry ingredients in one bowl and the wet in another bowl. Slowly combine them both and keep whisking (I did it by hand, no hand mixer required). This recipe makes about 4 big American style pancakes or 8-10 smaller ones.

use paper towel and smear a little butter or oil onto a frying pan. Don’t use too much- just a trace. Heat the pan until it’s hot. use a ladle and pour a blob of mix onto the hot pan. Watch the pancake until it ‘bubbles’- once the bubbles don’t get filled in by pancake mix, it’s ready to be flipped. Each big pancake took less than 5 minutes in total

serve with whatever you want!

You dont need sugar or cinnamon. Just make up a batch of yorkshire pudding mix (eggs, milk and flour). Put it in the fridge and then use it for yorkshires or pancakes. About as basic as you can get.

If you want them to be extra fluffy, use buttermilk instead of milk. Don’t but buttermilk. Waste of money. Just squeeze some lemon juice into your milk until is starts to curdle. When you see it begin to separate, leave it for about 10 mins (so do this as your first step). That’s basically buttermilk.

Also, no need for sugar in the batter. Add it afterwards (or maple syrup), or not if you want savoury pancakes (Eg cottage cheese, smoke salmon, poached eggs).

If you have any leftover, tear them up and use instead of bread in a bread and butter pudding. Or, just eat them cold, or toast them as you would a crumpet.
