To ask for the BEST shortbread recipe you have

I love shortbread but have been disappointed by all efforts recently. Too thin, weirdly tasteless and generally disappointing. I’m looking for a slab of shortbread, not a thin biscuit, the sort of thing that you could absolutely not talk at all if it was in your mouth Grin anyone got a good recipe?? I would definitely consider one with chocolate chips, if someone were that way inclined.

The bero book one of you have the recipient book? Chill before rolling. Cut shapes sprinkle caster sugar on chill again then bake lightly. Yummy!

I don’t have the BeRo book unfortunately but will have a look online! Is it a proper slab? Thick? Impenetrable without a mug of tea? Cutting shapes sounds like it will tend towards the flimsy

2oz caster sugar
4oz proper butter
Cream together till smooth and lighter in colour.
6oz plain flour, mix in well.
Grease a tin and press the dough in, no need to faff about rolling it, just use a knife to make slices in it. Sprinkle with sugar.
Bake at gas mark 5 for 20 mins or thereabouts till golden.

I melt my sugar in the butter. My very particular mother said it was better than M&S 😂

Not got the recipie on me, but you need one with a small amount of rice flour in it.
Block of salted butter, sugar, plain flour and rice flour.
I mix chocolate chips or glace cherries into my standard mixture, so if you find a recipie you like, you can modify with bits or flavors fairly easily.

You substitute 1oz of floue for 1oz of ground rice in the 2/4/6 recipe given above. To stop it being tasteless you could always add a pinch of salt. Years ago, unsalted butter was never used, it's a fairly recent thing

Some tips: you definitely need to use a proportion of either cornflour or rice flour to get that proper sandy, crumbly texture. Recipes that only use plain flour just end up with a boring biscuit with no texture. That is not shortbread.

Also, because there are so few ingredients, it really helps to use top-quality butter.

Finally, cook it long and slow - it always takes longer than you think but it needs a long bake, especially if you like nice thick shortbread.

I'm not his biggest fan but Paul Hollywood's recipe has always produced what you describe for me.. Shortbread

Recommend subbing some of the flour with a healthy dose of custard powder, does the same job as the rice flour and cornflour as recommended above plus a bit of extra flavour (doesn't make your shortbread taste of custard)

My Nan used to add semolina to shortbread. Her recipe was lost years ago but I think Delia Smiths one was closest taste wise when we tried to recreate it.

Felicity Cloake's millionaires shortbread is amazing. You don't HAVE to add the caramel and chocolate but I always do!
PS Why are Twix so revolting when millionaires shortbread is wondrous?

I stayed at a hotel in the Cotswolds recently and had home made rose water shortbread cookies served as part of my dessert. Absolute game changer 😍😍😍

I'd creme together equal parts of caster sugar and butter, and add the sand volume of plain, sifted flour.

Pat it out into a rectangle, use a knife to put indents where you want to break it after cooking.

Cook for 35mins in a medium hot oven. Over with a sheet of tinfoil if it starts to brown.

As soon as you take it out of the oven Scatter with sugar and break along indents into pierces. Enjoy.

I've made this in all kinds of ovens and always enjoyed the results.

If you don't have butter, there's just no point making it with anyone else.
