Easter Sunday meal & table

I live abroad and parents will be coming over to stay at Easter. It’s the first year in a few years, due to the pandemic etc. We have a little one so will be doing an Easter hunt in the garden etc, I thought of cooking a nice Easter meal for everyone, haven’t done this before…does it have to be lamb? Not great at cooking lamb.
Any nice ideas for the meal and table decs? I’ll have an Easter tree with pastel eggs on etc (Dd wanted one) that can be in the centre, any other ideas?

I rarely cook lamb. We just had 12 for Mothers Day and I did two sides of salmon in the oven. They cooked in half an hour and don't need any attention while cooking. I have a frozen turkey in the freezer as I always buy a back up at Christmas, after hearing horror stories of people finding their fresh turkeys have gone off! We will have that for the family for Easter.

It always seems to be lamb…would chicken be okay, with what? 🤔

I'm not a fan of lamb. Roast chicken would be good. Serve it with a couscous salad, crusty bread and butter, minted greens etc. White wine!

Nicholethejewellery · 28/03/2022 14:21

I'd do roast chicken. Don't see any particular need for it to be lamb.

TheFuckingDogs · 28/03/2022 14:22

I’d personally do a big let of lamb but no reason you can’t do a chicken.
Think of it like a Christmas dinner but with nice spring like touches instead of wintery ones. Lemony buttered new potatos and honey carrots instead of heavier roast potatos

We always did ham before DH went low sodium.

Lemon chicken of some sort is nice. Really anything lemon. Makes me think of spring.

I second roast chicken. For a big lunch gathering we often do it with lots of crusty bread and a big green bean, feta and flaked almond salad. Everyone always loves it! And it's soooo easy too 😊

I cooked whole sea bass this weekend, tail and head attached which went down well. Ocado sell them as well as whole sea bream. I sautéed some green beans with garlic and made steamed vegetable rice. I did the fish in individual foil parcels with lemon, garlic butter, salt & pepper and a bit of olive oil. Was easy and delicious.

Lamb is easy, I prefer shoulder which is very forgiving. Roast at 180/gas mark 4 for 20 mins plus 20 mins per pound, knock the first 20 mins off if you prefer pink. If you want to slow cook just cook at 150 and double the cook time

foodaddict21 · 28/03/2022 14:31

It definitely doesn't have to be lamb, but I can highly recommend this recipe - www.bbcgoodfood.com/recipes/garlic-herb-roast-lamb-boulangere-potatoes

Lamb is amazing, and can be cooked really easily.

But yes you’re free to cook whatever you like!

My parents often do chicken, even turkey, in fact.

Alwayspaintyournails · 28/03/2022 14:36

We do roast ham, spring greens and potatoes.

This sounds amazing!! I might nab that idea for our (COVID-delayed) Mother's Day dinner this coming weekend...

I love lamb, so I will be doing it this Easter, but I do lamb shanks. They take a long time but you don't have to keep an eye on them.

Featherblade beef is also something new I have come to love. A butcher will be able to cut these for you just give them at least a weeks notice.

In terms of decorations, B&M and Home Bargains have some really nice ones in at the minute.

Itcanneverbesaved · 28/03/2022 17:12

Thanks all, I love the sound of roasted chicken but with lighter foods-maybe new potatoes, instead of roasted, baguettes and couscous sounds lovely

We're having lamb, I love lamb and would have it every day if I could afford it. I did a leg at the weekend, de-boned it, slow cooked it for a couple of hours and then finished off on the BBQ so it was nice and chargrilled on the outside. Had it with flatbreads, Moroccan style cous cous, rosemary new potatoes, asparagus and roasted tomatoes, all dumped in the middle of the table for everyone to help themselves

I am so pinching this idea!
