in thinking sainsburys did not explain properly re xmas beef?

I spent over £20 on a 30 days matured taste the difference beef joint for xmas day from sainsburys. My guests in their 80s had not eaten outside their home since pre covid so i wanted it to be nice and they preferred this to turkey.

There was no mention of any cooking instructions on the outer packaging. When i opened it on xmas day i found it had to be cooked in liquid and was not the roast I expected. Googling silverside i can see that all silverside is recommended to be cooked this way otherwise it is tough but i had no idea. All the silverside joints were mixed in the cabinet with rump joints as each was individually priced. I never even considered there would be a difference and as it was such an expensive joint I just presumed it was a a traditional roast. It was labelled "British beef silverside joint".

AIBU to think Sainsburys should have explained this on the packaging as surely I am not the only person who doesnt know this. I wouldnt normally have beef except for the visitors.

I ignored the instructions to add 900ml of stock as my guests wanted roast and i covered it in fat and basted it and followed recipe online - obviously i didnt just stick it in the oven.

It was only as an addition to the turkey for my 2 elderly guests so didnt think i needed an £80 joint. I did a gorgeous roast beef for xmas dinner last year from Aldi but sadly my relatives were in lockdown and didnt join us. No idea what joint it was but it cost less than this year.

I would have shopped in Aldi again but Sainsburys sent me a voucher for £10.50 off £60 which tempted me. I really wish they hadnt or I would never have considered going there as it is so much more expensive.

Are you the same person who bought a gammon joint and then complained to the butcher that you could'nt eat their turkey as it was too pink?

I roasted it but sadly it was inedible - my elderly relatives couldnt even cut through it.

How long did you cook it for & at what temperature?

Did you carve it the right way? You need to cut across the grain, not along it. Some silverside joints have connective tissue between the muscles in different angles which makes it tricky to always carve across the grain.

Look at the photo. The bottom, right, corner of the label has a peel back section with the cooking instructions inside It was also clearly labelled as 'silverside'.

i'm a seasoned cook and always double check online (new) suggested cooking methods.
you purchased a cheap rump roast, so yes liquids are helpful but not necessary.
probably too late as tough as it is you can still make something edible out of it with some additional work and a pressure cooker.

But it was the cheap option OP, £20 for a joint is not a lot when you think what has gone into into it.
And agree it is not Sainsburys job to teach you hoe to cook.

You read the instructions but decided 5hat as your guests wanted a roast, you would roast it.

100% your decision. You had the necessary information, but decided to do something else

Certainly no camels back! I just wanted xmas dinner to be perfect for an elderly couple in their 80s who hadnt had a meal out of their house in 2 years. We didnt even want the beef and we had a lovely turkey and pigs in blankets but as they wanted beef I wanted it to be lovely for them too.

Obviously I blame myself for not knowing but I genuinely didnt know and wouldnt have known in hindsight. This is despite everyone on here thinking I am stupid.

Fwiw you’ll probably getting it refunded if you ask. I rarely (2/3 times a year) cook meat and last time I cooked lamb I was convinced it was off as I cooked it. It wasn’t but I’d already emailed a complaint and a voucher appeared a few days later Blush

I understand that you didn't know how to cook silverside.

What I can't understand is why, once you read the instructions, you decided to ignore them?

Silverside roasted in liquid is still a roast! It can still be sliced and eaten as a roast (and you have the beautiful cooking juices to make a lovely beef gravy!).

Your beef joint would have been much tastier if you'd followed the cooking instructions. It's really odd to read the cooking instructions on the joint, decide to ignore them, and complain that the joint was tough! It wouldn't have been tough if you followed the cooking instructions that were clearly printed and that you saw and read!

I had this joint for Christmas Day, and have done before. I roast it, covered, with a small amount of water in the bottom of the roasting pan (to start the gravy) for a bit longer than the label says, and it gets beautifully moist and tender.

Maybe you didn't cook it for long enough, or at a suitable temperature, if it was tough.

Silverside is a cheaper cut of beef, needs long slow cooking! Even then it can be tough, not meat I would give to elderly guests. The best cut of beef to roast is rib of beef, I never buy anything else to roast.

Maybe for the future you could go to a butchers who will happily give cooking instructions or advise on the best type of meat for the required purpose.
