One year I used melted chocolate to stick everything together as I don't like icing. Another year I used melted peppermints! Both worked great but the melted peppermints cool and set really fast so you have to be quick 😂

Just done ours. Over the years the only thing that properly works is hard toffee/ caramel. But be careful and use a silicone pastry brush.

A cup of caster (or any) sugar in a small pan, two tablespoons of water. Boil on high until it starts to turn a caramel colour then drip a bit off the brush into cold water in a saucer. You can feel the set consistency and judge if it's hard enough to stick the ginger bread together.

If you are doing this with children please don't let them near it. Its unbelievably hot! But your creation will stand the test of time and stand up to children icing it with decorations.

It goes hard quickly so you may need several re-heats of the original toffee.
