Can I ask how to make easy healthy meals with these?

Hoping for some traffic and ideas for a picky eater (me).
I'm very conscious my diet is lacking and hoping to get some ideas and suggestions to kick start a bit of a healthier food situation.

Vegetable wise no salad/ raw veg, will eat:

  • green beans
  • small amounts of wilted spinach
  • peas
  • sweetcorn
  • cauliflower
  • sweet potato
  • pretty much all types of beans/pulses

also soup with most other veg if I can get a smooth consistency.

Ok with most meats although tend to avoid pork.
Happy to have lentils, cous cous etc.

I would really appreciate some suggestions of healthy meals and lunches comprising of the above (limited) ingredients that would get me closer to my daily recommended intake as I have no clue where to start.

Could anyone help me get started?

If you will eat curries, most of those ingredients will go excellently. I make a chicken curry with oil, 2 chicken breasts, 2 tbsp curry paste (any), 2 sweet potatoes diced, 4 tbsp red lentils, 300ml chicken stock, 400ml coconut milk. Brown chicken, all other ingredients in, simmer.

Risotto is a good shout. You can put pretty much any veg into a risotto and make a filling healthy meal.

Baked sweet potatoes are lovely as a side dish.

Cauliflower is really good in curry. Ditto green beans and spinach.

If you like pulses, could you think of doing a nice tomato-based bean dish that could be eaten with meat, with rice or with pasta?

If tomatoes are no good, pulses are also good curried or in soup.

Red lentil sauce - we have it with pasta but you could probs have it with rice or on a jacket potato.

Olive oil
1 brown onion, chopped
Garlic to taste (probs 2 cloves - we usually put in 4 😂)
225g red lentils
One 400g tin chopped tomatoes
1/2 tsp cinnamon
1/2 tap oregano or mixed herbs
~125ml red wine

Gently fry onion off in oil until softening. Add garlic, fry a couple of minutes.
Add the lentils, tin of tomatoes, red wine, cinnamon and herbs. Fill empty tin with water and add. Stir.
Leave to simmer until lentils are soft and the sauce is thick, not watery (but keep an eye on the water levels as you may need to add a bit more to stop them sticking). Stir a few times, particularly as it starts thickening.
Once lentils are soft, add salt and pepper to taste. Serves 4-5 depending on portion size.

This is my most identifying post because I recommend this recipe to EVERYONE 😂

I do like curry.
I occasionally also make a ''bolognese'' sauce where I blend mushrooms, tomatoes, spinach and red peppers cook that down with passata and the minced beef so I can do tomatoes as long as they are cooked and blended (I know I sound like a 5 yo but I really can't do anything about it).

Sliced chicken with sweet potatoes, spinach and sweetcorn in a spicy dressing

Chicken breast or steak with butter bean mash, spinach/green beans

Red lentil dhal

If you like tuna - tuna, green beans, kidney beans in a french mustard dressing

This recipe suggests serving with sweet potato mash. I usually serve with green beans as well.

Is it the texture of raw veg you don't like, rather than the taste? I wonder if it's worth you trying to retrain yourself to like crisp things?

@FangsForTheMemory it's not just the texture, I find the flavors overwhelming.
I think it's because I used to be made to eat it regardless of gagging/crying and I now have a huge aversion.

I used to struggle to even handle it and make salads but I can happily do that now for DP.

Well five a day includes fruit, not just vegetables. Do you ear avocado, tomatoes, sweet fruits? I make a cooked breakfast with egg and smashed avocado on toast with mushrooms, tomato and spinach.

You could do a butter bean and mushroom stroganoff?

It's simple.

1 onion sliced
20g dry mixed mushrooms (soaked in hot water, so you can just use the water for taste)
(200g button mushrooms)
Green beans
400g butter beans
20ml Veggie stock
150ml White wine
Mustard
Thyme
Salt & Pepper

Fry the onion and mushrooms (If using) with a little oil.
Add beans and all liquids, add mustard, thyme and seasoning to taste. Thicken the sauce if required with starch.
Place in the slow cooker on low for 4-5 hours or simmer on hob for around 20-30 minutes stirring occasionally.

Can you handle green juice?

That's how I try and get most of my vegetables in. Don't like the taste but it's easy to drink and then it's done

Or what about falafel and hummus in a wrap or pitta without the salad?

Wilted spinach can be served with curries etc instead of rice.

With those ingredients I'd steam the green beans and dress with butter, lemon and black pepper.
Pea and ham or minted pea soup.
Jacket sweet potato- with hummus???
You could also incorporate those ingredients into various roast/gravy dinners.
I'd also do aisian style fried cauliflower and southern corn cakes (deep fried, not healthy).

Do you like rice? I'm lazy and use the micro ones but I make egg fried rice with chicken or chicken sausages or whatever protein
Add the spinach so it wilts, sweetcorn, peas, green beans
You can add some soy sauce or sweet chilli or any form of stir fry sauce works

Rukmini Iyer does some lovely veggie dishes, I would recommend her two roasting dish books (yellow and green) but if you (understandably) can't eat more veg then you might not want to fork out for two books.
Some of her recipes are online, they really are delicious.

If you are doing a dish with rice, add some peas, sweetcorn, cauliflower (small florets) and a stock cube and then serve with your meat/curry.
Add loads of veg to pretty much any meal really - add lentils & beans to mince dishes (chilli, bolognaise, cottage pie etc), cook cauliflower with potatoes for mashing together.

I hate mushrooms so will really avoid when I can 
Also same goes for fruit, there's nothing I can eat without gagging, it's pathetic I'm aware.

@georgarina I absolutely cannot handle green juice as much as I've tried. I'm trying to supplement a bit with Aldis own smoothie ranges (only the absolutely smooth ones with no bits Sad). Not great I know.

I do eat eggs and most meat, also happy with pretty much all carbs, it's just fruit and vegetables that are this huge uphill battle.

My friend doesn't eat any fruit or veg and takes something like this which might be worthwhile in the meantime
