AIBU to want to eat all the desserts?

Lately I have become obsessed with the desire to watch someone slave away at making a ridiculously complicated delicious dessert (a la Bake Off: The Professionals) and then I get to eat it.

I’m picturing a restaurant where the chefs make the desserts in an open area and people can come in and watch them, maybe sit at a counter, then get to buy the desserts. A bit like a sushi belt? And this would involve eating several desserts. Minimum 5-7. More if they’re small.

Does somewhere like this exist?

I live in the South East. Happy to pay £££££ but it’s got to be top notch.

Pollen Street Social have a dessert bar where you can do just that. Watch the chef make your dessert and then sit at the bar and eat it. You can even talk to them about how they make it (or at least, you could before Covid).
OMG YES YES YES The website and picture look incredible BUT can I order only desserts with no main? Will they think I’m strange if I order 5?
