Roast veg pack out of date

Posting here for, hopefully a quick response. Would you eat a pack of roast veg that was 2 days out of date? Just realised the roast veg pack I was going to make with dinner has a use by date of 22nd. Looks/smells ok. What would you do?

Use it. If it smells/looks ok I wouldn't even glance at the date.

I would. If it's passed the sniff test I always do except for pork, chicken and fish, and rice.

If they’re already cut up they are more prone to go slimy the longer they are kept. If it’s just a pack with some potatoes / parsnips / carrots etc it will be fine.

I would eat anything 2 days out of date if it smelled and looked right. I take veg off it's packs or buy lose anyways so when it goes off it goes to the bin regardless of "date"

I used the last of the cheap Christmas veg in early February... All stored somewhere cool and dark from before Christmas Eve!

Is the veg already cooked or to be cooked?

If you’re going to roast them yourself I really wouldn’t worry, unless they taste or smell mouldy.

If pre cooked I’d be a bit more careful and would want to nuke them for a few min in a hot oven or microwave.

It's pre cut onion, courgette, peppers and cherry tomatoes.

Smells ok
Looks ok
Isn't slimy
Pack isn't bloated
I would happily eat it.

It's better to buy whole veg btw. Lasts much, much longer without an issue

Still to be roasted. They came raw and pre packed.

If it's not slimy or smelly it will be fine.

If one or more bits of veg are suspect, you can cut off the suspect bit (or condemn the whole piece if you must) and the rest will be fine, but there is no risk to eating this kind of thing beyond its best before date unless it is visibly/detectably fermenting.
