As has already been said - this is one of many 'style' checks that can be turned on and off depending in on your needs and the document you're writing.
i'm going to ignore what i suspect is baiting about sex/gender and point out that people is more concise and includes individuals of all ages rather than the men or women which would only refer to adults so that's one way in which it might be useful. of course in other cases it won't but word isn't telling you you MUST change it, just making a suggestion which is obviously limited by the programs ability to understand context.
Use your own brain and have a real think about things - you seem to be saying you wouldn't make a change because software told you, why would you do so on the basis of context screenshots which you clearly don't understand the set up of and which strongly seem to have been deliberately arranged to push an agenda

YABU as @Perpetualheadache said, it's just a phrase suggestion, its not a political statement by Microsoft that they would only be allowing you to use gender neutral wording in all your written documents from now on. From the brief part of the document you can see it would also be a more concise phrasing. There's definitely more at work on that document than they're trying to control your phrasing such as spell check and other similar checks.

If you are genuinely going to leave Microsoft because used an algorithm to find a different phrasing then I can recommend WPS office, a great free open source package. However, you're being dramatic and looking for something that's not there.

But... it says men AND women. How much more inclusive can it be?? Should we be writing "men and transwomen and women and transmen and nonbinary people"? Hardly trips off the tongue, does it?

Either you think men and women = 100% of the group "people"... or you think there might be other groups as well.

It doesn't actually matter here. The first opinion means both are the same, and so "people" is simpler to write (in much the same way we wouldn't write "children and adults"). The second one means you have missed out some groups with a non-exhaustive list, so you can include them with "people".

Regardless of your views on gender, intersex people are biologically still a thing so you can be more inclusive while sticking to an anti-trans viewpoint if you so wish.

But surely people refers to all humans so including children. From what I can see of the rest of the sentence it’s referencing marriage so surely should be adults?

If you had said something that was an intrinsically male or female activity, such as 'he ejaculated" and it suggested it was changed to 'they' then meh that's bordering on something to complain about.

I don't think it's giving you ideological substitutions.

It's suggesting that a single gender neutral term would be more concise than using the three words "man or woman".
