Weird food sub - cooking advice

Ordered a joint of lamb, received two pork shanks instead. No mention of subs when delivered so couldn't hand back. I don't eat pork but want to give it a go as don't like wasting food. Can anyone recommend how I would cook these? Thanks in advance. 1

slow roast in the oven with a seasoning you like a little water in the base of the pan and foil over, if you have them in some 1/4rd onions, root veg (carrots etc) in the pan or pappers squash onions, put in the pan

Never even heard of pork shanks! I wonder if it's the same joint as a ham hock? I would cook it very slowly in a mix of cider and chicken stock. I'm jealous Envy

Hi. Put in a roasting tin with apple, carrot, celery, onion, garlic, bay leaves, bacon. (Or whatever veg you have. I tend to use leftover bits like the root end of celery, apple core, bacon fatty bits and carrot tops) and salt and pepper and thyme and a spot of olive oil. Give it a high heat blast for 15/20 in the oven then lower the heat and tip in a can of cider and olive oil and cover with foil. Cook slowly.

When done, bring it out to rest. Gently soften shallots or onion in butter on the hob. Add flour to make a roux. Then slowly add the cider reduction. Finally add some creme fraiche) or some milk if the cupboard is bare for a delicious cider sauce. If you fry off some mushrooms this is also nice in the sauce.
