To ask why my cooking has gone blue?

I have cooked this loads of times
It's a red kidney bean curry
All that is in the pan was frying onion paste. That was fine. Now I've added puréed ginger and garlic
It's proper blue!
IRL it's bluer than the pic 😳😳

To ask why my cooking has gone blue?

I’ve had this very occasionally and it is the (fresh) garlic. I did look it up but don’t remember the reason. No effect on taste.

It sometimes happen to me with garlic and inion. There is a proverb in DH's native language about them being cousins and not getting on.

I think you will have to rename it purple kidney bean curry because red and blue make purple. Not really helpful but in case anyone complains, get in first.

WHERE DID DD GET THE SEA ONIONS?

I have no idea what they are but according to Google a sea onion is not edible. Indeed poisonous. However, looking at the images I can't imagine you'd mistake it for an onion type of onion. Maybe she's misremembering the name?

There appear to be two different plants called sea onion, one poisonous the other simply not for eating. I suggest you look at google images.

Certain blue producing reactions aren't healthy but also don't really produce enough cyanide to worry about

Manioc/cassava and ginger combos are avoided in some cuisines

If it’s red onion did you have a bit of skin left in? I’ve used red onion skins to dye red eggs for Greek Easter before and they came out bluey purple.

Now DD says now it was in grocers as 'C onions' so lord knows what they are!

It tastes fine
I think I'll add a splodge of tomato purée as went from blue to grey brown with tomato and spices. A bit more red will improve its appearance

My garlic goes blue when I bake it eith honey and lemon and thyme on salmon. I always assumed it was the lemon doing it.

DS had orange porridge the other morning, because he hadn't washed the bbq sauce out if the pan properly Envy

Is the ginger from a jar? Perhaps the vinegar turning the kidney beans blue instead of purple?

I've had garlic turn blue. I chopped fresh garlic and put it in vinegar to preserve it in the fridge as I had a glut. It turned a greeny blue, but eventually turned back to normal colour. Wasn't poisonous and coooked/tasted fine.
