To just cut the mould off the posh cheese?

I got some cheese with truffle as a gift. I still have 50% of the wax covered round left. The open side has got white fluffy mould on it.

Can I just cut a mouldy slice off and eat the unmouldy rest? I will like make omelettes or truffle pasta with it so it will be cooked.

Is it hard or soft? If hard I’d definitely just cut mould off.

I always have cut the mouldy bits off blocks of cheese and carried on eating it.

If it’s soft the mould can spoil whole block so I’d bin it if soft.

I say do it, but I’m pretty laissez faire about food expiration dates and things like that.

I'm not a cheese person but DP will eat cheese whatever date is on it and just cut off the bad bits. He's always been fine doing that!

I mean, cheese is basically "milk gone off big time stylee" (© Stephen Fry) so it's probably fine, depending on the type of cheese.

Was it sharing a box with some Brie or similar? I find that the mould covering soft cheeses like that will also colonise the surface of other cheeses in the vicinity

It's cheddar with truffle so a hard cheese. It's been in a Tupperware on it's own and prob hasn't been used for a month.

Am going to cut it off and see what it looks like underneath at lunchtime. Even one more truffly omelette will be a bonus!
