My bread maker broke today but ..

I have a kitchen aid with a dough hook, do I actually need a bread maker?

We have the dough rise in the bread maker? Even if the oven will be on an will bake bread rolls in there.

I put the oven on today and rose the dough on top of it.

Just thinking do I actually need a bread maker when the dough hook can do the hardest bit ..?

Kitchen aid with dough hook is all you need. This will change your life. No more bread with funny hole in the bottom. More space in the kitchen. Winner!

I make all our bread, with neither kitchen aid nor bread maker. Sourdough that only needs to be stretched and folded (takes 30 seconds 3 times), so no long hours of kneading. And way better than anything that comes out of a bread machine

I had a bread maker but now just use my kmix (like KA) and a pizza stone and properly baked sourdough is sooo much better than the bread maker’s offerings.

Yep, sourdough, stretch & fold, much easier. The Kitchen Aid is good for yeasted bread. Bread machines sound a load of faff.

Well you don't need it, but I still like to have both. A dough hook is fine if I'm around to do the birds in between but you'd need the bread maker if you want to wake up to fresh bread.

15 minutes kneading in the KA will produce bread orders of magnitude better than anything that's just been stretched a couple of times

Obviously it depends on time and recipe.... You can't just take a recipe with high yeast and short ferment time and not knead it, but longer ferment dough can work very well without. This article explains well www.theguardian.com/lifeandstyle/2007/nov/24/foodanddrink.recipes

I have a kitchen aid. Good for cakes, okay but not great for dough. When I make pizza dough I start it in the kitchenaid sometimes for ease but then hand knead as the KA just bashes the dough about and doesn't knead as well as by hand. I'd love a spiral dough mixer for pizza and focaccia doughs but can't justify expense or kitchen space for weekly pizza

I have a mixer with a dough hook and have never used it! I really should try. I quite enjoy kneading bread dough by hand but don't always have the time.

I use his method and it's worked every time. Well, apart from the time I used water that was too hot and killed the yeast. 15 mins kneading in a mixer is far too long imo. Jacks method is 8 mins and it's not a strenuous knead at all. I hated hand kneading but when my Kenwood died I gave it a go and love it now.

They both produce different results. I have and use both.

I like that the bread machine can be filled and left on the timer so it's ready when I get gone etc. I use the kitchen aid for fancier bread.

He's great isn't he? I have been 'on a journey' with Jack and now alternate between a sourdough loaf and a half and half yeasted loaf. I even got some fresh yeast from Tesco!

I might be a bit obsessed ...

@Strawberrylemincake which bread maker do you have? Different bread makers give different results.

We have an old Panasonic, it’s been used to death, it gives consistently good loaves. However we recently used a Prima bread maker that a friend was getting rid of. The bread was awful, despite trying it several times. The recipe from the instructions needed twice as much yeast in it, and you could tell when you took the pan out, it doesn’t cook it as hot as the Panasonic. With the same recipe we use for the Panasonic, it didn’t rise at all. The kids could tell it was different and would t eat it.
