Not going shopping much atm, but need to make marmalade.

Has anyone spotted Seville oranges in a supermarket, or are they another Brexit victim?

Nigel Slater towards the end of Christmas Chronicles is good. Delia is failsafe.

@viques

Oh thanks for the replies, I had a nasty feeling I had missed the boat, or that we won’t get any at all if those mean ham sandwich stealing Europeans think of it!

Grin

I believe that the reason given for confiscating the sandwiches was no animal products to be taken out of Britain. Butter and ham. I'm sure that no animals are involved in the transportation of oranges.

I've used the Abel and Cole recipe before which went down a storm.

NB - Seville oranges available from them from 25 January.

@NameChange84 I used a recipe from Maugerite Pattern Basic Jams, preserves and chutneys where you boil the oranges whole (I did it in my instant pot which saves time) which is a very easy recipe and saves faffing with peeling Oranges etc.

Elphame · 12/01/2021 12:06

Yes I use a recipe where you boil the oranges whole. Much easier

NameChange84 · 12/01/2021 12:07

Thanks so much for the suggestions!

Notanorthadontist · 12/01/2021 12:10

Yes I pressure cook them whole. Cut in half and remove pips and then chop in the food processor. Saves lots of time and is delicious.

1kg box in Waitrose is on offer 3 for 2. So I think £5.79 for 3 kilos. Also has a foolproof recipe printed on the side.

I've done 2 boxes so far, 1 to go.

You can't beat proper homemade marmalade.

pickingdaisies · 12/01/2021 14:02

YABU. Where's the vote button?
(Btw. If you go for the waitrose 3 for 2, you can make marmalade from frozen oranges - easier than trying to make loads at once)

I realise this is an off piste question but marmalade related. I bought a tin of Seville oranges in the summer in case I couldn't get fresh ones. Has anyone used the tins from Lakeland and does it taste any different?
Thsnks

Ocado have them in stock for £2:20 per kilo.

@LoveACockatoo what a gorgeous photo!

I use a Dan Lepard recipe - thin cut, takes ages to cut up but gives a beautiful set

I cannot say it is easy exactly but it is gorgeous.....

GoldfishParade · 12/01/2021 17:02

Why do they have to be Seville oranges to make marmalade?

viques · 12/01/2021 17:23

I think it is something to do with the pectin, which is the stuff that makes the marmalade set. Also, if you have ever tried to eat a Seville orange you will know that marmalade is practically the only thing you could make with them, they are inedible as a fruit. You can make marmalade from other citrus fruits but IMO it is inferior stuff.

I now have my Sevilles so will be marmalading tomorrow. I usually give a lot of my marmalade away as presents, but since I haven’t seen many people this year I have quite a lot of the 2020 vintage left, so will only be making one batch this year, unless I happen to come across a reduced box calling my name........

Loveacockatoo we went to Seville in 2019, which was amazing
I picked a Seville orange off a tree and it was awful, so bitter!!

viques · 12/01/2021 17:34

It’s funny reading all the different methods of preparing the oranges people are posting.

Mine is :

squeeze the oranges and strain the juice into my maslin pan (I am a serious marmalade and pickle maker)

Using a teaspoon scoop out the pulp/pith from each half orange shell, remembering to remove the stalk. Discard the stalk.

Put the pulp/pith / pips into a muslin cloth and tie tightly.

Stack the half oranges into threes and slice finely.

Add orange slices and muslin parcel to the maslin pan.

Prep over, add water to the pan , cook slowly for several hours until the orange peel is tender . Remove the muslin parcel .

When the muslin parcel is cool enough to touch squeeze as much of the lovely gunk out of it as you can.

Return gunk to the pan, add the sugar, cook until setting point is reached.

You all forgot the most important ingredient - a good slug of whisky just before potting up!

You use Sevilles because marmalade is bittersweet. Other oranges make a much sweeter preserve and lack the "bite" a good marmalade should have.
