Of course. Mine com from my chickens so no dates. If they pass the test I eat them.

God I'm still eating eggs from December. Eggs really last in the vast majority of cases, four days over I would not bat an eyelid.

I’d definitely eat them. I’ve eaten eggs way beyond their date.

This is a non-issue. We had some eggs that were a year out of date, which I cracked onto the dogs' food every morning until they were finished. The only ones that didn't smell fresh were the ones with damaged shells. Regardless, the dogs gobbled them up and did not get sick. I conclude that the undamaged year-old eggs were in fact fine.

Completely agree with PP.

What I'm unsure about is how long I can keep raw egg (covered, in the fridge) when only partially used for egg wash etc. Any ideas?

I'd say at least 2/3 days Palavah. No idea how long it would take to go off, but I'd just put leftover egg in an omelette, which I have several times a week anyway so it would get used almost straight away here.

Beaten egg can also be frozen, so if you need egg wash every so often, just freeze the leftover in a small container.
