I know I am for asking here but I need help...what's the best dish to take to a get together when it has to be vegetarian?

I'm in Oz...so it's Summer here. DH and I are invited to a friend's house for a bit of a get together tomorrow and here it's usual to bring a dish or two to add to the mix...normally it's meat based or something for the BBQ...for eg. people might bring some chicken or steak or lamb chops or whatever.

Host is veggie and I'm just stuck. We DO eat vegetarian meals but generally hot things like curry and I don't want to make a curry...it's too hot and it will need to be warmed up when we get there.

Salad...everyone will bring that...bloody pasta or potato salad...

I was thinking of making some guacamole and other dip type things and bringing a load of tortillas but that seems too boring.

Maybe a desert? Any ideas please? I have to go shopping soon and the shops are closed here tomorrow so I won't get another chance before the get together.

Big portobello mushrooms are delicious on a BBQ. Marinate in olive oil, garlic, herbs first for extra niceness. You can take them over like that in tupperware. Also spiced griddled corn on the cob is v tasty too.

Greek salad? Colourful and Tasty!

Feta cheese, olives, cucumber, peppers, tomato, onion.

Make a dressing with lemon juice, olive oil, oregano, season with salt and pepper!

I'd take a pasta salad, or something like macaroni cheese.
For a dessert, maybe a strawberry/raspberry cheesecake.

Just buy the fake meat and proceed with bbq. The whole vegan vegetarian thing is so much simpler now you can just buy the corresponding "alternative" to the meat portion

Make it in a big foil tray then just cover and take with you. It's delicious the next day.

Roast vegetables (pepper, courgette, red onion, cherry tomatoes, fennel, etc) with couscous. Put some vegetarian bouillon powder in with the couscous soaking water. In fact, this recipe is great and easy to make www.deliaonline.com/recipes/collections/delias-summer-collection/roasted-vegetable-couscous-salad-with-harissa-style-dressing

Mac cheese Caribbean style, set like a pie

Here's the feta recipe. It's from this cookbook which I think is now out of print

pea and feta salad - peas with crumbled fate, chopped mint and a lime dressing - easy to make and tastes amazing

ghostyslovesheets · 27/12/2020 12:13

feta - not sure crumbled fate is a good idea!

Bills2pay · 27/12/2020 12:44

Just bring veggie pizza

CaffiSaliMali · 27/12/2020 12:46

In summer we do a nice warm pasta salad with red and yellow cherry tomatoes, a red chili, rocket and a simple home made dressing. You basically cook spring onions and garlic and add halved tomatoes and chilli and rocket, cook whilst pasta cooks and then mix together with a dressing and job done.

We also do a fusili dish with cottage cheese/creme fraiche/frontage frais (whichever we have in) with peas, mint, lemon juice and grated courgette which is bloody tasty. It's basically this: www.redonline.co.uk/food/recipes/a501179/lemon-fusilli/

Our recipe for it is a slimming world one so doesn't call for any grated cheese on top but we add grated cheese for extra flavour. Just make sure any cheese is veggie I.e. not parmesan.

You could also roast Mediterranean veg and toss them in cous cous and maybe some halloumi too. Makes a nice summery meal.

Blowingagale · 27/12/2020 12:50

Not sure if suitable for a BBQ but ratatouille is nice and a bit. You get more substantial vegetables in it rather than pasta
