my dad makes amazing chips, blanches them once leaves to cool then back in and so crispy... droool

Oh I dont have a chip pan or a dad (he died 7 years ago), but it doesnt stop you wanting.

Chip shop not a patch - he also did a mean runny custard too

must ask mum to make me some when i'm over in a few weeks time

Just cook a few at a time and don't overfill the pan with oil, half full at most as it will rise as you put the chips in.

I dug our pan out at the weekend to make big fat potato and parsnip chips. Blanche them first to make them really crispy. They were delicious.

aaaaaaaaaaaaaaaaaaaaaaaaah, great memories of my nan's wonderful homemade chips. I've got a friend who makes fab real fried chips, shame she lives 2 hours away though!

Big pan. Third filled with oil. Take OFF the heat when putting chips in. Enjoy

Yummmmmmm...go for it! My mum used to make chips - I can still remember her drying them off in a clean dishtowel before she put them in the chip pan. Best chips ever.
