You're vegan and coming to Christmas - I want to make you the BEST VEGAN dessert ever.... What do you recommend?

Just that....

I'm a keen cook who loves experimenting but havent yet done vegan puds... so would love a handful of recipes to try, and I'll choose my favourites for Christmas!

Cheesecake or some sort of tart as these are the more unusual things for vegans.

I second the Nigella vegan chocolate cake. I've served it with homemade coconut milk or other vegan ice cream and a warm sauce as pudding before. Sometimes salted caramel, sometimes something fruit based, raspberry works well. Cherry would be good with vanilla vegan ice cream. I once topped the cake with frozen mixed berries and made a vegan white chocolate sauce, like the Ivy's iced berries recipe.

Just pick up a Betty crocker sponge cake mix and a can of lemonade... Mix it together and bake, works fantastically well!

Then I use ready mix icing (lots are vegan).

It's simple and cheap and goes down really well.

A jar of Nutella 😉or a crumble with vegan butter. Apple or pear with cinnamon.
Nutella isn’t vegan, it has milk in it.

It’s easy to do a vegan version of rocky road, with dark chocolate, sultanas and digestives (some have milk in, but McVities don’t)

Something like pears poached in red wine with Christmas spices (cloves, cinnamon, ginger) is nice after a big meal, served cold or barely warm. With sorbet or vegan ice cream if you like.

Pavlova! The below recipe is good if you haven’t made vegan meringue before, but the best one I ever made flavour wise used passionfruit and mango which complemented the coconut cream really well.

Nutella is not vegan.

Look up vegan biscoff cheese cake. It's amazing and so easy to make. I'd recommend it regardless of someone being vegan or not.

I'm not vegan but I am dairy free. My favourite dessert is Coconut Rice Pudding.

1 cup Pudding rice
2 tins Coconut milk
2 cups almond or soy milk
1 vanilla pod
1/2 cup of sugar of 100ml maple syrup
1tsp cinnamon
1tsp nutmeg

Put everything into an oven proof dish, cover with foil and bake for 30 mins at 160, remove foil and stir, back in oven uncovered for a further 30 mins. You might need to add a bit more almond milk and cook for a little longer. I serve it with roasted spiced plums.

I’ve also made a lovely tarte tatin by replacing the butter in the caramel with vegan butter and the cream with coconut cream. Shop-bought puff pastry is usually vegan anyway, so it’s easy to do.

It’s so nice to read a post about feeding vegans which is enthusiastic rather than snotty ❤️

Ooh, OP, you've created the perfect thread for me! I'm a vegan, and I love baking and pudding making.
It's exciting, discovering how many vegan delights there are.
I highly recommend the book 'The Naughtiest Vegan Cakes in Town' by Melissa Morgan. It's my main vegan baking book. The recipes are all fabulous, and very simple to follow. I also frequently make a simple aquafaba chocolate mousse - 100g of 70% dark chocolate (I like Green & Blacks) the liquid from a tin of chickpeas (the Suma organic ones work especially well), about 4 tsps of icing sugar (or more or less according to taste) and a few drops of vanilla extract. Melt chocolate, and leave aside to cool a little; whisk the aquafaba to cloud fluff, add the icing sugar a bit at a time, whisk in vanilla. Gently fold fluff into the melted chocolate with a spatula. Spoon mix into ramekins or other serving bowls of choice. Refrigerate immediately, for at least 3 hours. Makes lovely light mousse. Serve alone, or with vegan biscuits and vegan cream or anything else you fancy, and it's delectable!
