To ask for your best Sunday Roast recipes

I can make a bog standard Sunday roast easy enough but we have friends coming next Sunday for dinner (only 4 of us) and I’d love to do something a bit more special.

So what’s your best recipe for roast beef, really crispy roast potatoes, homemade Yorkshire puddings, veg, anything else?

For crispy potatoes, i do as nigella does. After par boiling and draining, put them back in the pan, sprinkle over some semolina, put the lid on, and then shake about to rough up, then into hot oil for cooking (i add rosemary and some bashed garlic to the tin too). Best potatoes ever!

For yorkshire puds, get the oil in a good long while before you put the batter in, and make sure it is hot! Then don't open the oven while they are cooking

For the roast potatos I go goose fat then a mix of coarse semolina and rice flour.
For the beef it’s all about the best quality possible of the meat. I think he’s a bit of an arse but tbh James Martin is your man for Yorkshire puddings, make sure the fat is super hot!
I like to par boil my carrots then toss in honey or maple syrup and then roast for a bit 😊

The best quality meat you can afford - organic and ethically reared really does taste better.

I was dragged up on 'meat and two veg' type dinners so find roasts so boring. When I do them I play around with the veg, my favourites are: balsamic braised red cabbage, whole roasted celeriac with garlic, charred leeks, miso onions.

I also always splash a tiny dribble of seasame oil in the potato oil. It's a really strong flavour but a little bit makes them more interesting.

Terrible at yorkies though, we never have them!

Get a good quality joint from a proper butcher, not one of the horrible pieces of, say, silverside, that has a wedge of fat, probably from a different beast, tied to the top (available in most supermarkets).
For tenderness I would say sirloin, for best flavour, rib (on the bone). Do not overcook it and leave it to rest after cooking. If you put it on a meat plate, then cover it with double foil and a large clean towel (if you haven't got a warming drawer), and leave it for 20 to 30 mins, the meat will have relaxed and be lovely and tender. Meat juices that collect in the plate can be added to the gravy.

A roast is considered incomplete here without cauliflower cheese: trick to that is not to cook it for any length of time (I was putting it in with the potatoes and getting a soggy mess out at the end).

Do a proper roast dinner pudding - treacle pudding, apple crumble + custard, whatever.

Yorkies: do not get the oven too hot! Yes sizzling fat but 210 is quite hot enough. The old 'get your oven as hot as you can' thing was right when ovens didnt get that hot.

For Yorkshires, I get a coffee mug, 1 mug of plain flour, I mug of eggs, 1 mug of milk, wisk, sieve and leave to rest in the fridge for at least an hour
Heat lard until smoking then pour in liquid, do not open the oven for 20/25 minu

Get a good quality rib of beef from the butcher - not a supermarket. Beef needs to be hung, and for best flavour needs fat running through it.

Don’t overcook it. Put Yorkshire puds in hot oil on top shelf of oven, crank up heat, having already removed meat to rest.

Roasted cauliflower- chop up your cauliflower and put in a baking tray with onion and garlic cloves. Drizzle with olive oil and season - I use salt, pepper, turmeric, cumin and coriander. Roast for about half an hour. Sprinkle with some grated parmesan and stick it back in the oven for a couple of minutes. Delicious 😋

James Martin's Yorkshire pudding recipe is great. You make them in a muffin tin so they bake upright and get absolutely massive!
