Almonds didn't turn into butter - what else can I do with it?

Sorry hoping for traffic.

DP was making almond butter in the food processor for the first time. It's usually me who makes it, he wanted to add cinnamon and a bit of maple syrup but made the mistake of adding it at the beginning rather than at the end once the oils are extracted and it's almost smooth so it's now shot and won't blend any further than on the pics.

I've tried. It's been on and off for over an hour. The consistency isn't changing so I either have to bin it all which I'd hate to do or use it for something else - can anyone save me from throwing away perfectly good almonds and suggest a recipe I can use them for?

Add sugar, a small amount of flour (just to help make itnsticky) and an egg and dollop onto a baking tray - and make soft chewy almonds biscuits. You can freeze the mixture too so you don't need to eat them all now.

Make cookies.

Choose your favourite recipe and replace up to half the flour with the ground almonds. Ditto pancakes.

Great way to get some extra protein into growing dc.

You just need to leave the processor on for longer. Maybe 5 -10 more minutes.

This. I find a bit of flour needed too, almond butter doesn't seem to bind as well as peanut butter.

Does anyone have a tried and tested recipe? I'm not the greatest at baking.
There's a lot of it @starfishmummy as much as I'd love to there's only so much of it we could finish off like that Grin

I'd use it to make granola or keep it in the fridge as a porridge topping. Don't bin it !

Spread on a sheet of ready made flaky pastry, roll it up, then slice. Place the slices well apart on a well greased, or cooking paper lined baking tray. Bake briefly in a hot oven.

Or almond flour crackers always sound super easy, if you google ‘keto crackers’ there’s tons of 3 ingredient recipes. Squish flat on a tray, sprinkle with salt and bake is i believe the general vibe.

That's most of the ingredients for Zimtsterne, German Christmas cookies. They keep for weeks (although not until Christmas!). You don't need to bother with the meringue icing bit if you want to keep it simple. You can alter the recipe in proportion to the weight of your ground almonds.

Use it as the nutty filling for Baklava? Unless you were making almond butter because you're vegan, in which case Baklava is out...
