Not to want this Ming juice on my stir fry?

Morrison’s you dirty Gerties..what is this crap coming out of my stir fry?( also has happened to me from Aldi and Tesco too)

Can anyone enlighten me what this is? And how can I avoid it ?

When you say stir fry do you mean a ready meal? Or a bag or box of ready chopped vegetables?

Is this like a precut veg and meat that you just need to cook? This is probably the sauce? Mixture of soy sauce, spices and meat/veg juice. It gives it flavour.

Nope. No sauce. That was just steak, cut up and fried in a bit of oil.

Not sure I understand. Did you buy a piece of steak? And then slice it before stir frying? Why is the supermarket responsible?

It's the water and juices from the meat. Some has a lot. Some less. Depends where you buy imho.

Oil was quite hot. The garlic and chillis were sizzling. I used olive oil which probably was a mistake as it doesn't get as hot as other oils. It's a lot of water to come off a steak. You end up broiling it rather than frying. I agree it's where you buy it from. Morrisons used to be OK. Now obviously not and it's given me the rage!

I think Olive oil tends to char / smoke at a lower temp than vegetable or sunflower oil and that may be adding to the darkness of the juice coming out of the meat.

Agree with pps about the temperature too. It's bit of a combo ime. Watery meat and if you put too much of it it cools the pan down.

I get that with mince sometimes and I just turn the heat up to evaporate off the water whilst keeping the flavour. Don't throw it away FGS, there's flavour in those juices!

Also stir fry and set aside the meat before doing your aromatics/veg.

If I do steak in a stir fry I tend to coat the meat in a little veg oil and season, sear in a really hot frying pan and let it rest whilst I stir fry the veg and sauce bit. I then thinly slice it and add it for the last few seconds to warm through a bit then serve.
